What’s Been Going On in My Kitchen!?

I’ve said this before…but I go through phases. I go through phases of cooking a lot and then not cooking at all. Blogging a lot and not blogging at all. Running a lot and then not running at all. You get the picture. Anyways…I’ve been doing a lot more cooking recently and trying out new recipes, but unfortunately I was in a ‘not blogging’ phase and wasn’t sharing them all the time. I’ve really been enjoying Detoxinista and Oh She Glows for some healthy, but very tasty recipes, and I’ve also been using them as inspiration to make my own. So here’s whats been going down in my kitchen lately…

Roasted Veggie Bowls and Green Power Salads seem to be a theme. Kale, Squash, tomatoes, tofu, and grains. Pretty much anything I can find I throw in a bowl and make some random combination.



Arugula and Smoked Salmon Salad with a pepitas and citrus vinaigrette. I love the pepperiness of arugula with the buttery smoked salmon. This is a great pairing.

Whipped banana chia oatmeal. Topped with fruit, coconut, or any other fun ingredient that I’m craving that day. And now that pumpkin season is in full swing-I’m enjoying lots of whipped banana pumpkin oats!


Lemon Chicken Pasta and broccoli (ok, I confess, this was made by the great Jill Grozalsky)

Roasted pork loin rubbed in Cinnamon, Cumin, Coriander, and Salt and Pepper. This is a must try. This combination of spices makes a perfect rub for pork.

Lots and Lots of roasted veggies. This is such a great way to cook veggies because it is so easy and you can make them in large quantities. I make a lot at night so I have plenty for lunches the rest of the week. Just add a little protein, some whole grains like quinoa or wheat berries and you have yourself a healthy little lunch.



Vegan Pizza inspired from Oh She Glows. Who knew cheese-less pizza could be so delicious? I loved this recipe,and was surprised at how easy this was! I even made it for guests, and they thought it was delicious too!



I’ve also been playing around with Carrots N Cake‘s 2 ingredient pancake. But I wanted someway to include more greens. So I decided to try it with spinach. And even though I’m not crazy about the smell-it tasted pretty good. In the magic bullet I combined 1 egg and 1 egg white, as much spinach as I could fit, and 1 small-medium sized banana. I poured the mixture into a hot, greased pan and cooked it very slow. When it was finished, I topped it with Peanut butter and Pumpkin butter (one of my favorite combinations). I’m still perfecting this recipe, but it’s become a breakfast staple around here.




I also got creative the other night and made a Roasted Red Pepper and Basil Sauce that was out of this world. You must try this!

Roasted Red Pepper and Basil Sauce

    Ingredients:

  • 1 roasted skinless red bell pepper
  • 1 huge bunch of fresh basil
  • 1 hot pepper (I used a thai chili pepper)
  • 2 Tbs minced or crushed garlic
  • 1/4 Orange Juice
  • 2-3 Tbs TJ’s Orange Muscat Champagne Vinegar
  • 1/4 C Olive Oil (add more if want a smoother texture
  • salt and pepper to taste

Directions: Mix everything in a high speed blender until sauce is smooth. Add salt and pepper to taste.

I poured this on a mixture of shaved yellow squash and wheatberries and called it a day. Super Delicious.

And last but certainly not least-an AMAZING peanut butter fudge from Detoxinista. This is just a couple ingredients, and so incredibly simple. So much-that I think I’ll go make some now. You should too! I like to cut it up in small squares and have a piece for a snack. Sweet and savory.
