Spiralized Zucchini with Roasted Cherry Tomatoes and Basil

If you haven’t noticed, I tend to make a lot of vegetarian meals. And here is yet another one. This dish could not be easier and literally consists of 4 ingredients: Zucchini, Cherry Tomatoes, Garlic, and Fresh Basil.

First, cut about 20 cherry tomatoes in half and add them to a baking sheet. Drizzle with Olive Oil (I used Ahuacatlan Avocado Oil and Garlic) and sprinkle generously with salt and pepper. You can now get my favorite Ahuacatlan Avocado Oil at El Tri Market! I literally use the oil on everything! Roast the tomatoes at 400* for about 15 minutes.

While the tomatoes are roasting, spiralize one very large zucchini or 2 small zucchini’s. Add the spiralized zucchini to a pan with a little more of the oil and garlic and cook down until tender.

Add in the roasted cherry tomatoes, salt and pepper to taste, and toss together. At this point you can add any other seasonings you may want to spice up the dish. Right before you are ready to serve, add in lots of chopped fresh basil and toss together.

Who needs spaghetti when you have Zucchini!? I also added some nutritional yeast for protein and a cheesy flavor.

Could not be simpler or more delicious!
