Sometimes I’m in the mood for a salad. And sometimes I’m in the mood for more than a salad. That was my dilemma the other day. It was a raining outside, my brother and his fiance were in town for the weekend, and we were all just sitting around relaxing for the day.
It was lunch time, and I couldn’t decide what I wanted. So I just started throwing some veggies together when it I got the brilliant idea to turn just my ordinary salad into a kicked up Southwest Salad topped with fresh Mahi Mahi that my brother had caught on his bachelor party fishing trip.
My parents had all the ingredients to make a tasty little lunch that everyone enjoyed. Into the mix went Baby Spinach, Romaine Lettuce, Diced Red Peppers, Diced Green Peppers, Diced Tomatoes, Carrots, Black Beans, and Corn.
The dressing consisted of 1 small Cup of Fage Greek Yogurt, 1 packed of Ranch Dressing, Lime Juice, Garlic Salt, Cumin, Chili Powder, and a small drizzle of Honey to take the hard edge off.
We topped the salad with the fresh Mahi Mahi and and dressing.
This is exactly what we needed to brighten up that rainy day. And everyone seemed to love it.
