We’re Growing Up So Fast!

As I was sitting around the dinner table with my friends last week it occurred to me that I’m turning into an old lady. Well, not really, but I did feel very grown up. My roommate and I invited our friends over for dinner and games, and we made Coconut Curry Chicken. We enjoyed a very relaxing night in with good food, good wine, and good friends.

Erica’s boyfriend bought us a Le Creuset dutch oven as a housewarming gift, and we wanted to give it a whirl. I’m officially in love…with the dutch oven that is. ;-)

Coconut Curry Chicken


Serves 5
Ingredients:

  • 10 Chicken Tenders
  • 3 C Vanilla Almond Milk
  • 1 C Shredded Coconut
  • 2 Tbs Coconut Oil
  • 3 Tbs Sweet Curry Powder
  • 2 tsp Cumin
  • 2 tsp Coriander
  • Salt to Taste

Directions:
Sprinkle and rub the chicken with some of the spices and let them sit for an hour in the refrigerator. Cut the chicken in 1 inch cubes and brown in the dutch oven with the coconut oil. Once the chicken is cooked through, add in the almond milk, shredded coconut, and the remaining spices. Cover and simmer for 10-15 minutes. Add salt to taste and more spice if needed. Serve over brown rice

Rub the chicken with spices and cut into 1 inch pieces.



Add the chicken to the dutch oven and cook through.

Add Almond Milk, Shredded Coconut, and Spices.


Simmer for 10-15 minutes and serve over a bed of brown rice.


Our friends brought a roasted vegetable salad to have on the side, and it was delicious.





The night finished up with a great game of Apples to Apples.

As I was sitting at the dinner table thinking about how grown up I felt, I was also thinking about how much my life has changed over the past few months. Between breaking up with my boyfriend of 4 years in November, moving apartments, rekindling an old friendship and gaining a roommate, to just learning how to be single and independent again. It’s been really difficult and really great all at the same time. I know it is not the end of the world, and everyone goes through break ups, but they can be really hard especially when you were with the person for so long. Luckily I have such great friends and family to help me through it, and I couldn’t be happier. Life is all about learning, and every day I feel more positive and more hopeful for everything in my future. But I digress…

A night in with friends was just what I needed this weekend.

Hi Lauren, I’m sorry to hear you two broke up, I remember you talking about how long you were together. I’ve always found looking back that the painful times in my life were the times that helped me grow the most. Being single can help you find yourself and enjoy things you probably didn’t enjoy before, so embrace it, enjoy the times with your friends and having a roommate. It’s a chapter in your book of life you will look back on one day and miss believe it or not. And who knows what better things are ahead for you!!
