Spring is in the air here in DC! It feels amazing, it smells amazing, and it’s definitely getting me excited about farmers markets, taking walks, going to the beach, and just spending more time outside!
Now, back to the food. Sometimes you just need something simple. You all know by now I love to make dishes that are super easy to make. And this one definitely hit the spot. Inspired by my Foodbuzz roommate, Gina, my friends and I made a simple beans and rice dish that couldn’t have been more perfect for a light “family (or should I say friends) style” dinner.
My friends and I decided to make Cuban Style Black Beans with Cilantro Lime Rice. I’m a big fan of making simple ingredients like rice even better just by adding spices or fresh herbs.
We started by sauteeing garlic, and red bell pepper in a pot with some olive oil.
Next we added 2 cans of rinsed and drained black beans to the same pot with some water, Oregano, Cumin, Salt, Pepper, and bay leaves.
At the same time we cooked some brown rice on the side. Normally this type of dish calls for white rice, but we decided to do brown rice for more fiber.
Once the rice was finished we added fresh lime juice and chopped cilantro.
After simmering the beans for about 15 minutes we topped our zesty brown rice with beans and a little salsa for some more flavor.
You could also add meat to this dish, but it was perfect vegetarian style as well. Simple, Delicious, and Healthy…everything I love about cooking.
