Need I say more?
I’ve had a huge bunch of cilantro in my fridge for weeks now, and no idea what to do with it. I love cilantro, but with all the packing that is going on in the apartment these days, I really haven’t been cooking all that much. Every time I opened the refrigerator my beautiful bunch of cilantro stared back at me just waiting for me to make something really special with it. But my brain was fried. Finally when the outter leaves started turning a brownish color with a slimy texture I knew it was time to get creative.
I woke up one morning with an idea, jumped out of bed, and went to town with my cilantro. A can of chickpeas, a bunch of cilantro, and some tahini later I had made some really great hummus that definitely hit the spot.
Spicy Cilantro Hummus
Makes about 1 Cup
Ingredients:
- 1 C Chick Peas
- 1 Big Bunch of Cilantro (about 1 C)
- 1/4 C Tahini
- 1 tsp Minced Fresh Garlic
- 2 Tbs Olive Oil
- 1/2 C Orange Juice (or lemon juice)
- 1 tsp Hot Pepper Flakes (add more or less depending on the amount of spiciness you desire)
- Salt and Pepper to Taste
Directions:
Gather all ingredients and add everything to a food processor. Mix until smooth. Add salt and pepper to taste and serve.Copyright © 2011 Eat, Drink, and Be Hopeful All Rights Reserved

Throw everything in the food processor and whirl away.
And serve.
I enjoyed my hummus on 2 pieces of toasted Ezekial bread topped with fresh tomatoes. It was fantastic. So healthy, fresh, and delicious!

I love hummus with cilantro and jalapeno but have never made it! Yours is beautiful!

Yummm! Looks delish Lauren! I seriously never thought to mix cilantro with hummus. And cilantro is one of my favorite flavors! I’m thinking I’ll save this recipe for St Patricks Day!
