This is one of my absolute favorite salads of all time. I prepared this salad for one of my HealthCentral videos because I just can’t get enough of it. It has pretty much everything I want in a salad..veggies, cheese, crunchy, savory, sweet, and textures. This a a salad you can use as a side dish or bring to a summer party or BBQ. The best part of all…it couldn’t be easier to make.
Green Bean Salad
Serves 6
Salad Ingredients:
- 12 oz Green Beans (frozen or fresh)
- 1 C Chopped Fennel
- 3/4 C Chopped Walnuts
- 1 C Dried Cherries or Cranberries
- 2 oz Goat Cheese; Chevre
- 1 Tbs salt
Dressing Ingredients:
- 3 Tbs Olive Oil
- 2 Tbs White Wine Vinegar
- 1 Tbs Dijon Mustard
- salt and pepper to taste
Directions:
Start boiling a pot of salted water. Once the water is boiling drop in green beans and cook for a few minutes. Transfer beans to an ice bath to keep their bright green color. Add beans to a bowl with the remaining ingredients. Mix dressing ingredients together in a separate bowl and lightly coat the salad. Mix all together and serve.
