WOW! What a day. And I thought working from home would be a breeze. On the contrary. It was a day filled with phone calls, emails, and driving to businesses around town. I’m SPENT!
But on the flip side of things, I had some delightful eats today. So delightful that I cared to share with you all.
The morning started out bright and early with some “blood pumpin” exercises. I still can’t do much with my lower half according to the Physical Therapist, but he said just give it a couple more weeks. In the mean time I’ll stick to abs, arms, and leg lifts. Does anyone else do side leg lifts or is just me? I’ve been doing these since I was little- before bed, and right when I get up. I love how it stretches your legs. It feels so good afterwords.
Anyways…back to the food.
For breakfast I threw together some Fage Greek Yogurt (about 1/2 C or so), 2 Tbs Sunland All Natural Banana Peanut Butter, 1 C fresh strawberries, and a sprinkle of hemp seed. I’ve never really liked Fage, but I decided to give it another try.
All mixed up in a mess.
It was ok, but not the best thing I ever ate. I think I need to do less yogurt next time so I can actually taste the delicious peanut butter that is Sunland banana peanut butter. Instead it was just blah.
Lunch was an awesome snack plate. 1 Ezekial Tortilla toasted into little chips, broccoli and carrots, and 2 Tbs black bean hummus mixed with lots o’ salsa. Heaven I tell you…Heaven. Food for Life should really come out with an Ezekial chip-I bet they would be great!
I love unsweetened tea, so I am a big fan of Honest JUST Tea. This green tea was extremely refreshing on this hot summer-like day.
I also had some swiss chard on the side. I picked up 2 huge gorgeous bunches of organic swiss chard a few weeks back because 1. I’ve never had swiss chard 2. I consider it the King of the greens and 3. I know how good it is for you so I wanted to try it. Yesterday I washed the leaves so well, took off the stems and ribs?, and steamed them for a while till they were just wilting. I brought some to work for lunch and jazzed it up with some dried currants, sliced almonds, and fat free feta. Very similar to this recipe made with spinach. However, it did not taste the same. I couldn’t even finish this because it was so earthy and rustic tasting-and that is putting it nicely. Maybe if I sauté the chard it will taste better? I am not sure, but I don’t want to waste all of the leafy greens that are sitting in my fridge right now. That just would not be right.
As I was driving around to businesses today I had a BAD craving for some fro yo. I remembered seeing a sign a while back at Chicken Out about banana soft serve. I thought to myself..this can’t be what I think it is. So today I decided to find out what this was all about.
And what I thought couldnt be…COULD! They were serving up Gena’s FAMOUS banana fro yo! They were making it with a juicer (which I have heard about, but never seen nor tried), and it came out literally with the consistency of Frozen Yogurt. I got mine with blueberries.
The overall consistency was awesome, but it was a little too much banana for me. I usually make my banana fro yo with a little almond milk or regular milk to break up the banana, so I wasn’t as big of a fan of this as I am mine. But it sufficed the craving.
For dinner I did something a little different. I sauteed some veggies, Mann’s of course, with some Trader Joe’s Yellow Curry. I added some chick peas for protein, and ate it on top of some quinoa. I had originally planned to eat it inside a sweet potato, which would have been fab, but my sweet potatoes were all brown inside, and I had to throw them away. TOTAL BUMMER! The curry and veggies and chick peas rocked though!
