OMG-is it Friday? Being off from work for 2 weeks has left me with absolutely no clue what day it is. Does that happen to anyone else? What is going on with the weather here in DC-AMAZING! High 70′s and sunny for the next week. I love spring weather. It is crisp and clean, not too hot, not too cold. JUST right.
Yesterday was my first day back, and it was a bit hard because I am getting used to the new boot the doctor gave me, and I still can’t walk on my foot. I’m trying to put a little pressure on it at a time and slowly ease into walking again, but it is so crazy how sensitive everything is right now. And I am so scared to mess anything up so I’m extra careful, which sometimes turns into a bad thing because I end up hurting myself more. I know-I’m a clumsy person, I admit it. So today is another day, and I feel a little stronger so I will just try a little more today and see how it goes.
Yesterday was another great day of healthy eats! It’s funny, when I eat more unhealthy food, my body craves more unhealthy food. Now I try not to think of anything has *bad* or *forbidden* just because of my history with over and under eating, but I do think that there are foods that are more nutritious and healthy for the body and ones that are not. Obvious..right? Well in the past 2 weeks, because I couldn’t really make my meals, I ate a lot of processed, salty, unhealthy foods. I ate more carbs and cheese in 2 weeks then I usually do in a month. Ok, maybe that’s over exaggerating, but you get the picture. So my body has been really craving those foods, and I have to make a conscious effort not to give in. And believe me, after 2 days, I already feel better.
So here we go-
Started out with a Chocolate Cherry Bomb. This one was made a little differently then the ones in the past.
- 1 C Almond Breeze Almond Milk
- 1 Scoop Sun Warrior Chocolate Protein
- 2 Tbs Raw Cacao Powder
- 1 Tbs Hemp Seeds
- 1 C frozen cherries
Ouu lala. So delicious, so filling, so the bomb.
Kettle Cuisine and Whole Grain Arnold Thin for lunch. This was the roasted vegetable flavor and it tasted like homemade soup. It was so comforting and full of flavor. I’m not gonna lie-you may see another one on tomorrows post!
I tried the Honest Tea Kombucha yesterday too. Have you guys tried these yet? I used to only drink the GT brand, but these taste pretty good. They are a little sweeter, and have a little more flavor than the other brand.
And dinner was a hoot! I came up with this very random idea, and it turned out surprisingly well. I had leftover *breading* from my coconut shrimp a while ago so I decided to use it to make breaded pork chops. The breading consisted of toasted coconut, almond flour, and whole wheat bread crumbs. I dipped the chops in an egg mixture and then in the bread crumbs, and then BACK in the egg, and BACK in the breadcrumbs. I was going for a real thick crust. I baked them in the oven at 350* for about 30 minutes, and they were smokin! The coconut added a touch of sweetness, and the almond flour added so much flavor.
With a side of roasted broccoli and a small organic sweet potato. Who would have thought coconut on pork? Not me! But it wasn’t bad. I did have to dip it in some honey mustard. I have to figure out how to make the pork a little more juicy. Any suggestions?

i LOVE that feeling of being off from work and not knowing what day it is! except when you try to run errands on a saturday and keep thinking, why is it so crowded…

My favorite season is summertime or the beginning of fall. All the things I like to do are outside!

So happy for you that you have a walking boot! I know it must be scary, i can imagine! But at least you can walk! I am super careful right now too… you don’t want to mess anything up! But i’m sure you’ll be fine. You can’t be more clumsy than me
