Happy Earth Day

Creative title…huh? As most of you know, Or should know now, today is EARTH DAY! I don’t know if it is because I participate in a healthy blog community, but it seems like this year more and more people are making a big deal about Earth day then I ever remember before. So many companies and brands are participating and encouraging people to live healthier, greener lifestyles. I love it!

There are definitely some good Earth day posts floating around out there today. If you want some great tips on clean eating check out Amie’s blog, The Healthy Apple. She has a great post on what clean eating is, and how to achieve it to help our planet. I got wrapped up reading it this morning. Very encouraging!

I forgot to mention this before, but last week I had my first physical in I don’t know how long. I was a little nervous to get my cholesterol and other things checked because 1. Ever since I’ve been working at the wine store I have increased my intake of cheese by about, oh I don’t know, 100%?!?! 2. I haven’t been able to work out hard-I’m talking really sweat it out-for a good 5 months now 3. I haven’t been eating the best since I hurt my foot because it has been hard to cook and prepare healthy meals when you can’t even stand up. So I was a little scared.

The actual physical part went fine, besides the fact that I had to get a tetanus shot, and I HATE shots, but the lab results were not so fine. I don’t know the details because I need to “make a follow up appointment to discuss my lab results” which never is a good thing. I frantically called the doctor assuming the worst, and he gave me a quick run down of everything, and told me the reasons why he wanted me to come in.

Turns out My Vitamin D level (which he wanted to check because of the mysterious fracture in my ankle) was VERY low, and my cholesterol is high. Now, along with the facts above, cholesterol runs in my family, and that is why he is concerned. It’s funny because my dad also had low vitamin D last time he went for a physical, and I usually take after my dad’s genes.

This news left me heartbroken. Even though I was prepared for bad news, it still is not something you want to hear. I know my cholesterol wouldn’t be that high if I didn’t have this foot problem, and it is just another reason why I am so frustrated with the entire situation, and can’t wait to get moving again. After being upset for the rest of the day, I realized it’s stupid for me to be upset, I need to DO something about it. I need to be more serious then I was before, and get myself healthy again. I also need to get moving again. Even though I’ve changed some of my eating habits in the last few weeks, I still haven’t done any exercise. So that will be making a come back in my life as well. My friends wedding (and my birthday) is exactly a month away today, and I am determined to look and feel great by that day. I will NOT let this foot issue get in my way.

Ok, I’m done ranting. Onto some fun food.

I tried a new Amazing Grass bar the other day. This one was the Chocolate and Peanut Butter Protein bar. It’s not bad, but it’s not the best bar I have ever had. I felt good eating it because I knew it had all of my greens and vitamins, and it had protein. However, it’s a little high in calories (270) for a bar, and didn’t keep me full like my smoothies do. I understand this bar might be meant to be a meal replacement so 270 calories wouldn’t be bad for an entire meal, but if that is the case, then I wish it kept me full longer. I think I will stick to the berry flavor bars and the greens and meal powders. Those are baller!

I also tried a new Peanut Butter flavor for Sunland peanut butter. And yes, now I have 2 jars open, which is very tempting at times. This flavor was Caramel, and UH MY GAH! The most perfect combination in a jar I’ve ever tasted. This stuff is soooo dangerous. Holy deliciousness. Ok, you get the point. I made a simple breakfast yesterday because it was just what I was in the mood for.



My breakfasts have been lacking some creativity these days, I know.

And last night was something…well…Epic (as Caitlin would say). This idea actually came from her blog, and she tweeted the other day something like ‘if you haven’t tried the sweet potato and baked bean combo then you are not living’. I knew it was then that I must try this because I love sweet potatoes, and I love baked beans. And she was right. This was FABULOUS! Once Chris saw my plate he was a little jealous. ;-)


A lot of times I come home from work, and I don’t feel like cooking an elaborate dinner. I love tons of veggies with my dinner, but it’s so hard when I get home at 7:30pm to find the motivation to cut up all the veggies, and then cook them. So sometimes (when I can afford it) I use already cut up veggies. Or even a little cheaper-I like to stock up on frozen veggies. In this case, I used Mann’s fresh pre-cut, ready to eat broccoli.

I just put a bunch in a bowl, spritz with olive oil spray and stick in the microwave for 2 minutes. I know the microwave isn’t the most ideal cooking method, but 2 minutes in there makes the broccoli the perfect consistency for me, and it couldn’t be easier.

I’m off to get in a good 45 minutes of abs and arms (it’s been too long!), and finish worky work!

you know what ? so many people that i’ve talked to lately have been low in vitamin d. my mom just was put on these vitamins for it, said hers was ridiculously low and now has to take it every day. hopefully since its getting warmer and theres more sun it will be easier to keep our D levels up!

I am partial to buying salads in bags, but I always cut up my own veggies.

Hmm, that makes me wonder what my D levels are like. I know there is some vitamin D in my calcium supplement, but I’m not sure how much. I’ll have to look into that!

I use regular veggies and cut them up at home. I get an off smell, especially from broccoli when it is pre-cut. I am not doing anything particularly special for Earth day. Every day I use a thermal mug for my coffee, bring my breakfast and lunch to work in reusable containers in a lunch bag. I recycle everything I can (the office does 1-7 plastics too so it’s easy). Tonight I have to work my 2nd job so since that requires putting things in bags, I think I’ll ask first if people want a bag. Hopefully I’ll save a few trees.

I rarely buy pre-cut veggies. They are more expensive and I feel like you get less for the money.

It definitely depends on the vegetable. My family normally buys frozen broccoli and Asian mix from Whole Foods. But fresh we buy our greens, tomatoes, zucchini, carrots, etc. It just depends on prices usually.

That caramel peanut butter sounds and looks incredddible!

I sometimes by pre-bagged salads or cut up veggies, but mostly do it myself. It is kind of a Sunday afternoon chore that I don’t mind too much! But I never re-wash the salad even though you are supposed to.
I’m going to be more aware of the waste I produce when traveling, it is easy to forget!

If it’s me, I use pre-cut. I am so lazy! My fiance cuts everything fresh though!
