Good Friday

by Lauren on April 3, 2010

Yesterday was not only Good Friday, but it was also a very good Friday. It’s funny because I don’t really always follow all the rules for Lent (give up something, fast, things like that), but growing up it was ingrained in my head not to eat meat on Fridays, especially Good Friday. Now I know there are reasons behind this, but it doesn’t really mean anything if you’re vegetarian or don’t care about meat anyways. Giving up meat is not hard for me. I hardly eat meat anyways, and when I do, I don’t eat that much. So instead I try to give up something else to *sacrifice*. But for some reason, I still remember every Friday of Lent-don’t eat meat! But I digress….

Yesterday was another busy day at work. I think I am finally getting caught up on everything!!! It is always hard coming back after some time off because things always seem to be a little more chaotic then when I left. I dunno…maybe thats just my OCD talking.

As for my foot-well I am still not able to put all my weight on it yet or walk normally, and I called the doctor to ask if this was normal, and it is. The nurse said it takes up to 2 weeks to walk normally again. So I felt a little better that nothing was wrong, but wasn’t too happy with the sound of two more weeks! She said to put 30 more lbs on it every 4 days. I’m sure if you have ever had foot surgery or anything like this you already knew that, but I however, did not. Everyday my foot is getting a little strong, and I feel a glimmer of hope at the end of this dark tunnel. It has just been an incredibly challenging last few months. But I keep telling myself-it’s temporary!

The warm weather is making me crave cold smoothies so of course I made myself a mighty large cherry chocolate bomb for breakfast. I love the way these taste, but they are also so filling! This was the usual:

In the late morning I had another Honest Kombucha. I have to say-these are really growing on me. They taste a whole lot better then the GT brand if you ask me.

Lunch was a repeat…sorry! And I know you are probably getting tired of this lunch, but I had it again. Kettle Cuisinesoup and an Arnold thin. It’s the easiest thing to make right now, and they taste good. For yesterdays lunch I chose the tomato soup which was filled with veggies like squash and green beans, and then I added some leftover broccoli to it as well.

Look at the ingredients. I mean this soup tastes like home-made soup. The tomato soup was really flavorful, and I loved all the different veggies. It was a different tomato flavor then other tomato soups I have had, but I LOVED it.

I love their slogan:

Now, as you could have told, that lunch was not that substantial so I found myself extremely hungry in the afternoon. I snacked on an apple, a mini Larabara, and some walnuts. But that just didn’t cut it…and my eyes kept staring at the fresh bread we had in the store. Remember-we are selling fresh bread for our tastings on Friday and Saturday? Well I kept eyeing the cranberry walnut, and I ended up caving in. My boss let us all take one home, and I couldn’t resist. So I had a few small piece off the end, and it was incredible. This bread is so fresh and hearty, and sweet, and nutty. Sorry no pics-but I’ll get some today at the tasting.

Since I had the bread, I wanted to make dinner pretty light. Chris and I ran to the grocery store to get some necessities for our Easter dinner, and stopped at Fontina Grill for some carry out. They have one of my favorite salad there, and it was exactly what I was in the mood for.

Grilled Romain, onions, peppers, tomatoes, cucumbers, olives, pepperoncini peppers, feta, and grilled shrimp. The combination is amazing. I tasted the dressing, but I didn’t even need it because there was already do much going on in the salad.

Clearly I hated it. Licked it clean-just how I do.

Well that concludes this post. Today I have to go into work, but I am pretty excited because we are doing a chocolate and wine tasting. And then tonight I have to get the apt ready because I’m having my family (minus my brother and his girlfriend :-( )over for Easter. I don’t know what I was thinking when I decided to do this, but I know they will enjoy it. We have a pretty busy Easter planned, so it should be a fun day!

What are your plans for Easter?

I went to Whole Foods yesterday and couldn’t even find the Honest Kombucha :-( At least GT’S was 30% off, wahoo!
Easter: The relatives come to our house. I like holidays like that since I don’t have to move

Oh wow.. that bread sounds amazing!!!! I”m glad to hear that things are getting better with the foot! I know it’s hard but you are right, it’s just temporary. Just remember that. Repeat a million times a day if necessary (it’s necessary for me some days :) )
Love ya!

I love that “no shortcuts” quote on the box… because really, it’s so simple to add simple ingredients! :-)
