I am usually a person who LOVES winter, but with all this snow and having to be on crutches, I’m just over it. I’m ready for Spring. Bring it on.
Lately I’ve been eating out a little more than I usually do just for different reasons, but I’ve been doing my best to make good decisions at restaurants, which is something that is usually difficult for me. I have also been enjoying some things at home. The other day I made my famous home made Guacamole with semi-homemade tortilla chips. La Tortilla Factory had sent me some samples of their new line of corn tortillas, and I decided to bake them until they became chips.
The corn tortillas come in White Corn, Yellow Corn, and Chipotle. I tried a sampling of each. I like how soft and flexible the corn tortillas are, and I really like that they are whole grain, but I wasn’t too impressed with what they tasted like. After baking them, they weren’t as bad, but I’m just not liking the flavor of these tortillas. The chipotle tortilla was surprisingly spicy. I thought it would have the flavor of chipotle, but it definitely had a kick to it.
My famous guacamole is by far the best I’ve ever had. (Not to toot my own horn or anything, but I think it is.
). When Chris and I were driving back east after living in LA, we stopped in San Antonio and ate at a cute restaurant on the Riverwalk.
Long story short this restaurant, made homemade guacamole table- side and it was the best I had ever had. So I remembered exactly what was in the guacamole and have been perfecting the recipe ever since. I am going to share this recipe with you because I want you to see for yourself just how amazing it really is.
EDBH Famous Guacamole
Ingredients:
- 2 Ripe Avocados
- Juice of 1 Small Fresh Orange
- 2-3 Tbs Fire Roasted Salsa
- 2-3 Tbs Chopped Red Onion
- 1 Handful Chopped Fresh Cilantro
- 3 pinches Himalayan Sea Salt (or any type of good sea salt)
- 1 pinch of fresh ground pepper (optional)
Directions: Cut avocados up in a medium-large bowl with a knife and spoon. This is the easiest way to not make them mushy. Add the following 6 ingredients and mix gently. Add more salt or pepper to taste. Serve with fresh corn or flour tortilla chips and a refreshing margarita.

I didn’t have all the ingredients yesterday to make this exact guacamole, but I made do with what I had, and it was pretty good.
I have to say, out of all the tortillas-my favorite were the yellow corn.
I also made one delicious smoothie this morning for breakfast. It was a PB&J green monster. I needed something pretty easy on my stomach and I was in the mood for something cold and smooth-hence the smoothie. In my smoothie I had:
- Chocolate and Vanilla Unsweetened Almond Milk
- 1/2 of a frozen banana
- 3/4 C frozen blueberries
- 1 Tbs MaraNatha All Natural Peanut Butter
- 1 packet Chocolate Amazing Grass Supergreens
It was smooth, cold, peanut buttery, goodness. I loved this combo!!!!

I’ll have to try making guacamole like that.. love the stuff! I always add cilantro, it just adds that special something to make it extra good

I would comment 500x more often if I wasn’t in school (darn school!!!). I think your blog is fabulous though.
I will definitely try that guac recipe one day. I used to work at a Mexican restaurant and they made guac table side too. The servers hated it because it took up so much time but the people were always happy.
Nut butters in smoothies is so delicious. It makes me sad that I can’t have it stuck in my mouth though ya know?
