We Have a Winner!!!!

After my big bowl of wheatberries this morning, I was surprisingly hungry for lunch fairly early. BUMMER! I hate when this happens. But anyways, I had a veggie filled lunch once again. I don’t know if you’ve noticed, but I’ve been on this sandwich and soup kick for a while. Maybe it’s a comfort thing? I’m not sure. Well whatever it is, it’s good.

Lunch was a Dr. Praeger’s California veggie burger on 2 pieces of Arnold Whole Wheat bread with Annie’s Honey Mustard, 1 piece of 2% provolone cheese, spinach, and tomato.

I’m telling you this combination is down right delicious. I also had some of the leftover veggies made into a salad with some Cavaloca Olive Oil and salt and pepper. I really love the flavor of this olive oil. It’s strong yet subtle at the same time.

And as if that wasn’t enough I had a side of very spicy creamy corn and lemongrass soup. I put WAY too much hot pepper in the soup this time-I was practically on fire! I know I said I hate this soup when I first tried it, but it has really grown on me. Especially now that I make it spicy!

I realized while I was eating lunch that I have not eaten meat in the last 3 days. I didn’t do this on purpose, but I just don’t desire it anymore. I would consider myself about 80-90% vegetarian, but I can’t give up meat and fish all together. I was just really surprised to see that I had eaten no meat in three days. I also wanted to see if I was still getting protein in my diet so I looked back through my blog and surely enough…I was! I was getting protein through other sources like cheese (a little too much of it these days), nuts, nut butter, eggs, and other sorts of things. Turns out I can definitely get my fair share of protein with out meat.

That lunch looks amazing. And your tomatoes look so fresh and red- are they from a farmer’s market?

Sometimes olive oil, salt, and pepper on veggies makes the very, very best salads.

I too have been on a soup kick lately. I think this icky DC weather is making us crave comfort!

I love the idea of being a whateveryouwanttobe-arian ;) I was a vegetarian for 8 years, then avoided red meat for another 2 years after that. These days I eat a little bit of everything, but also can go days without eating meat as it’s what I’m so used to. Plus, it’s more fun to go out and know you can eat almost anything that’s being offered :)

Love your blog! Funny, I thought I wanted to go into broadcasting too, but got pulled into the fitness industry!

Unfortunately I did not make the soup-it’s organic soup that I found at the health food store.
