Hope you are all enjoying the start to the week. Because of all the crazy snow (yes I know you are tired of hearing about it) I worked from home today. And on top of all the snow we had, we are expecting up to 20 MORE inches. I know, crazy.
Did you watch the Superbowl yesterday? We didn’t really do anything special since most of our friends were snowed in, so we just watched the game and made a more simple Superbowl menu. Most people get excited for the actual Superbowl Game, but I get excited about the game day EATS. What can I say? I’m a foodie at heart. Most of the time we tend to eat a lot of junk food for the superbowl so I tried to make our game day eats healthy and satisfying.
We had some munchies…
A one serving bag of Pirate’s Booty, which i LOOOVVEEE! Look how simple the ingredient list is. I know it’s not the healthiest snack in the world, but for a chips or white cheddar popcorn alternative, this is great snack.
Later I made eggplant “chips” that were so disgusting I did not even want to put them on the blog. It was just sliced eggplant that I put in the oven on the lowest setting for about an hour.
Next up was another batch of bruschetta. This time I did not sear the bread in olive oil. Just toasted it and topped with thin slizes of mozzarella, and tomato mixture. I was out of fresh basil so I used dried basil instead, and it tasted great.
And I made veggies and hummus. My veggie platter had raw carrots, celery, and broccoli with a mixture of hummus and salsa. I love mixing hummus and salsa together. It gives the hummus much more flavor with out a lot of calories. This salsa was peach/pineapple.
After our snackies we moved on to the main course. I present to you, the BEST hamburgers I’ve ever made with a side of roasted parsnip fries. The patties were made with 93/7 lean ground beef, garlic powder, salt, pepper, and All Natural BBQ sauce. I think it was the BBQ that was added to the raw meat that really kicked it up a notch. These were so juicy and delicious. My burger had a piece of 2% milk provolone, lettuce, tomato, and a little more BBQ and honey mustard. I’m not joking, it was so juicy and flavorful.
The parsnip fries were something new, and I really enjoyed the spiciness of them. I basically like any root vegetable made into a fry and these were just that. I just tossed them in a little EVOO with salt and pepper and roasted them for about 1/2 hour at 400 degrees. This was a great healthy alternative to regular fries.
This morning I had a Biotta juice, coffee, and a protein muffin. Biotta is a company that makes organic juices that are simply the fruit or vegetable and nothing else. This particular juice tasted like a bahama breeze. As I was drinking it, I thought how good it would be sitting on a beach somewhere or even in a mixed drink.
Later I made a power smoothie. This thick and hearty smoothie included:
- Unsweetened vanilla and chocolate almond milk
- Amazing Grass Green Superfood Packet
- Organic Maca Powder
- Chia Seeds
- frozen blueberries, raspberries, and blackberries
- 2 handfuls organic spinach
I love the chocolate Amazing Grass Superfood. I add it to almost all of my smoothies for all the nutrients and rich chocolate flavor. See more under my Favorite Products on the side of my blog.
Even though I drank the entire smoothie, it was probably one of the more disgusting ones I’ve ever made. I don’t know what it was, but it was gross. I think I like the sweetness the frozen banana adds to the smoothies and that is exactly what this one was missing.
I also had another one of Angela’s Classic Glo Bars in the afternoon for a little pick me up. I really do love her bars. I like that they are not too sweet and really fill me up after eating one. No other bar does that!

That bruschetta looks SO good! I need to remember how simple it is – perfect for get togethers! And that burger, mmm. Smart thinking adding some BBQ to the raw meat!
I just found your blog via the fitbloggin site. I love it! I totally understand about the nast. smoothy. Sometimes I make something and it turns out just awful, but I feel obligated finish it anyway!
