Why do I always feel like I’m behind on writing my posts? Well I’m gonna catch you up to speed real quick here. First of all HAPPY VALENTINE’S DAY!!!!!
The other night I made Fitnessista’s Vegan Almond Butter Chocolate Chip cookies. HOLY FOOD MOLY! These cookies were unbelievably good. I had to limit myself from eating the entire batch. I made them so big so that I could cut them with heart shaped cookie cutters, but that didn’t work out so well. I am in love with these cookies, and may never go back to the other kind. I know I said that about the raw cacao cookies she sent me too, but my eyes are being opened to all these new *healthier* cookies that taste great! Even my mom, dad, and Chris liked them. They are a winner!
I spent the day with my mom yesterday which was fabulous! I love a little mom daughter bonding time. I started my day with a workout and some wheat berries in an almost empty peanut butter jar.
My workout was about 35 minutes and I did this circuit of exercises with 5 lb weights and was seated the entire time:
- Bicep Curls: 3 sets, 15 reps
- Tricep Extensions: 3 sets, 15 reps
- Overhead Dumbell Raises: 3 sets, 15 reps
- Front and Side Lateral Deltoid Raises: 3 sets, 15 reps
- Resistance Band Rear Delt Row: 3 sets, 20 reps
- Oblique Bends (2, 5lb weights in one hand =10lbs on each side): 3 sets, 25 reps
- Crunches with legs raised: 3 sets, 25 reps
- Bicycle Crunches: 1 set, 25 reps
My breakfast of wheat berries in an almost empty peanut butter jar was exactly what I was in the mood for. I baked some apples in the microwave with cinnamon and added them to the mix with a little flax seed.
Such a hearty warm breakfast, and I ate every.last.bite.
Then my mom and I did some shopping and had lunch at this cute little restaurant called Mosaic Cuisine and Cafe. Chris and I stumbled upon this restaurant a while ago and just loved it so I knew it was the perfect place to take my mom. The restaurant is known for its French comfort food and their waffles. Not just you ordinary waffles, but these waffles are savory, crispy on the outside, soft on the inside, and the accompany every dish. I ordered a cup of the slightly curried sweet potato soup and the roasted vegetable salad. The soup reminded me of butternut squash soup and was really comforting. The salad looked incredible, but was lacking some flavor.
After lunch we did even MORE shopping (well window shopping I guess) and headed home. I had a really light dinner since my lunch was so big, and then Chris and I went to see the movie Valentine’s Day. It was a cute movie, and definitely got me in the spirit of Valentine’s Day, but even more for, the movie was a little cheesy.
This morning I made an old favorite for breakfast: CREAM OF WHEAT! I haven’t had this stuff since I was little, and my mom would make it for us when we could come in from playing in the snow. It brought back so many memories.
I put some organic dark chocolate chips in for a little love.
