I woke up WAY early (for me) today and got to Staples right as they opened to get some blog business cards made. There is a reason for this that I will discuss at a later date. The process took much longer than I thought, but I’m pretty happy with the way they turned out. Because I was rushing around as usual I packed the easiest thing possible for breakfast and lunch.
Breakfast was two butt’s of Arnold Multigrain bread topped with Peanut Butter & Co’s The Bees Knees.

This breakfast was so-so. The bread was a little old so it was very flaky and dry. And I would have also enjoyed some fruit on the side, but there was none to be had. Instead I had a cup of delicious Guatemalan roast coffee with Agave and organic half & half.
This combination kept me full for a surprisingly long time. My very late lunch consisted of another vegetable sandwich, but it was a little different then yesterdays. Today I topped a toasted spelt English Muffin with 1 slice 2% milk provolone cheese, tomato, fresh spinach, and a Dr. Praeger’s California Veggie Burger.
MMM MMM. This sandwich was one of the best sandwiches I have had in a while. I love the heartiness of the spelt English muffins.
I had some leftover tomato and spinach so I drizzled some olive oil on top and sprinkled a little salt and pepper. This was pretty fantastic, and a perfect way to eat those leftover veggies.
Later I munched on a very juicy orange.
I had to run a few errands after work (Staples, Ulta, Lucy) and by the time I got home I wanted to exact same dinner as last night. So guess what I did? I had the same exact dinner as last night! Well almost the same-same sandwich, different soup. A grilled cheese panini with 2% milk provolone, tomato, and Annie’s Honey Mustard on sourdough bread. Just as good as last nights.
Instead of the canned soup I tried this organic creamy corn and lemongrass soup. I was really excited to try this soup because I love anything lemongrass.
Unfortunately this soup was down right disgusting. It was so bad that I almost threw it out. But you know me, and I hate wasting food so I added a bunch of hot pepper flakes and that did the trick. It was much better with the spiciness. HMM Interesting.
In other news-You want to know something pathetic? My workout regimen these days. It’s so pathetic that it doesn’t even exist. I need to whip my butt into gear and get motivated again. I know there are so many exercises I can be doing for my upper body, but have been so lazy. I blame it on the snow and the cold! That’s all for now.

hi! I see you love lemongrass… have you ever tried Moonstone’s coconut lemongrass sake? It’s SO good, I just had it a week or so ago in Orlando.
I’ve been meaning to try those Dr. Praeger’s burgers… yours looks so good, I may need to get on that.
