Breakfast Burritos for Lunch

Wow-there is a lot of snow out there. But it seems as if it has completely stopped snowing, which I guess is a good thing. But I kinda like being snowed in. No where to go, nothing to do, but have Sex and the City and Friends marathons. My eats today have been pretty amazing. For lunch I was in the mood for breakfast burritos. I became obsessed with breakfast burritos after staying with my brother in San Diego. But I like to make my own with healthier ingredients.

My breakfast (errr lunch) burrito started with a brown rice tortilla. This was my first time trying brown rice tortillas, and I’m not really sure if I’m 100% gung ho just yet.

In my hearty breakfast burrito I had eggs (1 egg and 1 egg white), 2% milk provolone cheese, and peach/pineapple salsa. Peach and pineapple salsa is my favorite salsa ever. I love the sweet spicy combination.

I liked how the brown rice tortilla was sturdy and kept all the “filling” wrapped together very tightly. It also had a very simple ingredient list and was fairly low in calories compared to other flour tortillas.

When I went to take a bite I noticed it had a different smell that I wasn’t really fond of. But after tasting it I thought it was pretty similar to a flour tortilla, just a little chewier. I really liked it with the eggs and salsa, but I’m not sure what it would taste like with other ingredients. The smell faded away once I kept eating and I really enjoyed the burrito. None of my fillings fell out of the burrito like they normally do, so that was a big plus. Unfortunately Chris hated the tortillas and was upset when he heard we were having them tomorrow for our Superbowl fajitas. Oh well-I still thought they were good.

Before our burritos, I munched on some Multigrain tortillas and salsa.


It was a perfect satisfying (and hearty) lunch.

On the exercise side of things-I am having a really hard time lately with the fact that I can’t exercise like I’m used to. It is driving me absolutely crazy. I’m used to being able to take a run whenever I want or just even walk around. But now all I can do is sit and walk on my crutches. I have a little scooter that allows me to rest my knee on a seat and scoot around, but it’s not the same as walking. I’m just frustrated and feel very stuck. I would love to go out in the snow right now and start shoveling or just take a walk, but I can’t. I’m tired of doing arm workouts-it’s not the same. I know it’s just going to take some time to heal, but I am ready to get this boot off and have my ankle be better. If you are new to my blog-I have 2 stress fractures in my ankle and will find out if I need surgery on February 19th. I don’t usually have a desire to work out, I just make myself do it because it’s good for me, but right now I have never wanted to do anything more than I want to work out now. But I guess in the mean time I just have to focus on healthy choices and do as much arm and stomach work outs as I possible can (and yes I realize I haven’t done any in about 2 weeks).

Question-I just had to do a space upgrade on wordpress and realized that to upload videos now I have to buy a video upgrade, which is 60 bucks. Am I reading this correctly? If I want to put youtube videos on my blog I need to pay 60 bucks? Can someone help me out with this?
