Good morning! It seems as though I have a few new readers these days, and I just wanted to welcome on the newbies to Eat, Drink, and Be Hopeful. I hope you will enjoy reading about my journey through food, wine, and traveling while maintaining a healthy lifestyle.
Sorry I was a no show yesterday, but I had an extremely exciting day that I will be sharing all about with you at a later date. It was a great day for Eat, Drink, and Be Hopeful, and for me! In the meantime I will share with you some more wonderful eats.
On Wednesday night I headed up to my parents house after work, and my mom had made a wonderful home cooked meal for us. I love my moms home cooked meals. I grew up in a house where my mom always cooked. We hardly ate out, never got take out, and were always fortunate to have extremely well balanced meals every day. I haven’t written much about my mom on the blog because I’m not sure she wants to be on here, but I just have to tell you-she is the BEST cook (and the best mom)! My mom is one of the healthiest people I know, and that really comes from practicing balance and moderation her entire life. She is a role model for me in more ways than one, and I try to emulate her idea of a healthy lifestyle. Even though eating healthy every day is a little harder for me, she is a wonderful person to look up to and see that the proof is in the pudding. I digress.
When I got to their house she had made a delicious brisket, broccoli, asparagus, and a dish that was mashed potatoes, kale, kielbasa, onions, and cheese. I know that sounds a little strange (and I was very skeptical at first), but after taking the first bite, I had died and gone to heaven.
She had found the recipe in a cookbook, and I’m telling you it was outstanding. Who would have thought kale and mashed potatoes…but it works! The dinner was so good that I went back for seconds of brisket and mashed potatoes.
It is kind of funny that I just mentioned how I haven’t eaten meat in the last three days, and then I get to my parents house and there’s meat! But like I said I don’t avoid meat on purpose, I just don’t desire it. However, when someone makes brisket as good as this one, I can’t resist!
Thursday was a day filled with healthy eats such as raw carrots, raw celery, raw broccoli, hummus, raw almond butter, raw sugar snap peas, 1 veggie spring role, sushi, and a few other samples of some vegetarian eats. I don’t think I’ve ever eaten so many raw veggies in one day before. There was a lot of driving yesterday so we had to have some healthy eats in the car. I didn’t take any pictures of the food, but like I said I will be sharing all about my day with you a little later.
This morning I woke up starving because I didn’t eat much yesterday besides all those raw veggies listed above. I found this tasty looking egg dish in my parents refrigerator that I decided to try. It looked like it was egg, cheese, tomato, and Italian seasoning. I had a piece of the egg with a Pepperidge Farm 7 grain deli flat on the side.
When I eat eggs I always like to eat a little piece of the egg on my toast. I don’t know what it is, but I like to have it all in one bite.
Now I’m off to work for what I think will be a short day because they are calling for snow to start falling in the next hour or so. If you haven’t heard- we are about to get ANOTHER big snow storm here in DC!!! I can not believe how much snow we have gotten this winter. Chris and I were supposed to head up to the mountains in West Virginia and spend the weekend at my parents winter house. They have a small house in Timberline, WV that they rent, and we were planning a weekend away, but now they are calling for 2 feet of snow, and neither of us have 4 wheel drive cars. So that idea went out the window. So instead we have stocked up on healthy, satisfying foods that will keep us happy all weekend long while we are stuck in the apartment. I have a great Superbowl menu planned and we are just going to have a blast! (I hope!

Eggs make me feel sick when I eat them on their own!
I love eggs done over easy (preferably at home in a non-stick pan, not covered in grease) with lots of toast. Sadly, I don’t eat this very often because the raw yolk makes my stomach go a little off.

I have been making eggs over hard lately! Especially during this crazy snowstorm. That’s right, I said that I was cooking
I’m expanding my palette from the usual scrambled with cheddar. it’s kind of fun to cook and not as nerve-wracking once you get through it once. i’m getting there larn!
