The Meal that Had it All

Today’s lunch was something spectacular. Last week my BFF Kelly came over and we made dinner together. It was so delicious, and I completely forgot to take pictures. Well luckily I had some leftovers from that meal to have for lunch today. We has made a dish we found on Epicurious.com called Quick Moroccan Vegetable Couscous. It was really yummy and had lots of great spices. We had the veggies over a combination of whole wheat couscous and quinoa. TWAS DELIGHTFUL! For my lunch today I had the little bit of the leftover veggies and quinoa with one small Sage sausage and loads of kale. I topped the kale with some hot pepper flakes that really spiced things up.

You all know by now how much I love contrast in food. I love salty with sweet, and I love spicy and sweet. Well this meal had it all!!!! It was spicy, sweet, savory, earthy, and just seriously had it going on! I love the spice from the cumin and coriander, and the sweetness from the cranberries and raisins. Such a wonderful dish that I HIGHLY recommend you to try if you like this sort of thing. We used all fresh and organic ingredients and you could definitely tell.



The kale on the side was a nice added touch. The vegetable dish and quinoa by itself was not spicy, but by adding the hot pepper flakes to the kale, it took the dish to a whole new level.

Since we are talking about contrast for a little dessert I had a piece of a organic dark chocolate bar that had sea salt and caramel. Again-more contrast and I just can’t get enough. My new favorite sweet is dark chocolate and sea salt.

Later I felt hungry again and had a juicy orange and some almonds to tie me over until dinner.

As Chris and I made dinner we munched on some Trader Joe’s Ratatouille bites. I love these little babies.

Dinner was so so easy and very simple. Chicken breast, quinoa, and broccoli. I was serious when I said simple.

I combined the quinoa with cranberry sauce and topped with fat free feta. MMMM MMM

I forgot to tell you all this, but I finally was able to make an appointment with the surgeon at Georgetown Hospital for my ankle. The earliest appointment available was February 19th. Can you believe it? Supposedly Dr. Paul Cooper, the one I am seeing, is the best doctor in the area so there is quite a wait. I just hope I don’t need surgery and that my ankle heals properly. Keeping my fingers crossed! Alright peeps-I’m gonna call it a night and get caught up on some much need Orange County Housewives. Check ya tomorrow!

!!!!! I lovee Trader Joe’s Ratatouille – they had them out to sample a few weeks back and I had to buy a box.

Feta makes everything betaa :)
