Man-let me tell you something. I am having SERIOUS runners depression. The weather has been so perfect for running these last few days and now that I can’t run, I’m dying to get out there more than ever. I don’t know if it is the fact that I can’t run that is making me want to run so bad or if I really just miss it. Who knows…none the less…I’m craving a good run right now!
On to eating-since it seems to be the only thing I CAN do these days.
After my breakfast disaster I tried to redeem myself at lunch. I made a humongo veggie sammie filled with:
- zucchini
- tomatoes
- spinach
- Dr. Praeger’s California Veggie Burger
I piled all those veggies between 2 pieces of Arnold Whole Grain bread that had a schmear of dijon mustard and a wedge of Laughing Cow Swiss Cheese.
The sammie was good, but it wasn’t great. I certainly got my fill of veggies though! And it filled me up.
I paired my sandwich with an orange and a little Kombucha. I have a weird fascination with these drinks and like to drink them over the course of a day.
Unfortunately for me the orange was dry. Who likes dry oranges? Certainly not me, that’s for sure. I don’t know what is with my food today, but I can’t seem to catch a break.
I got a little hungry mid afternoon and made a nice lil snackie. This one was actually pretty good! I had one large Honeycrisp apple and a peanut butter and yogurt mixture to dip it in. This seems to be a new thing for me and I’m loving it. I mix about 2 Tbs Peanut Butter, in this case it was Peanut Butter & Co.’s The Bees Knees, and about 1/4 C or so of vanilla or plain yogurt. In this case it was plain flavored since I was out of vanilla. Mix it all up and you have a lovely peanut butter yogurt dip for the apples.
I only ate about half this mixture and saved the rest for later to have with some carrots (not pictured). I had the munchies and it was sooo good!
Now onto dinner. I was in the mood for lettuce wraps so I cooked some chicken tenders on the grill in teriyaki and grated 2 carrots, a zucchini, and sliced up a red bell pepper for the toppings.
This was such a delicious, colorful, healthy meal!
I made a little peanut sauce on the side using peanut butter and a little peanut oil.
Twas an awesome sauce that added pizazz to the wraps. Look how colorful everything is.
For dessert I had the rest of my Newman’s Own Organics orange chocolate chips cookies that the company had sent me to try a while back.
I’m not usually a fan of orange and chocolate together, but something about these little cookies is so enticing. I can’t stop at just one. I love dunking them in cold milk. There were about three left in the bag and it was the perfect light dessert. So maybe I didn’t have the best eats in the beginning of the day, but the second half of my meals definitely made up for it.

I’m so sorry to hear about your loss mate, I hope you and your family get through this rough time… and I hope your ankle recovers quickly so you can cure your run cravings soon.
I never really have much luck with green monsters, they’re always a bit “off” for me.

Have you tried some cross training now you can’t run? When I had an injury and could not train for my race, I did a lot of swimming and cycling and it helped when I started running again. I’m not sure whether you are allowed to do it though, my doctor ok-ed it so it’s always better to check.

I *have* to try that peanut butter/yogurt mixture. I can’t believe I haven’t thought of doing that before, haha! What a great way to get more “bang for your buck” with peanut butter =)
