Snowy Breakfast

I had been conjuring up this dinner all day and could not wait to get home and make it. A while back I had seen on many blogs a recipe for pumpkin roasted chick peas. Well I made them and fell in love so I knew I wanted to try them again. But I changed up the recipe a little. I mixed the beans up with a little olive oil, organic pumpkin puree, pumpkin pie spice, cinnamon, ginger, Xagave, and a sprinkle of smoked paprika for a little kick. Once I mixed them all up I placed them on a baking sheet with some fresh broccoli and roasted everything in the oven for about 20 or 30 min. I never keep track of time, I just constantly check them.



I also made a sweet potato on the side. I topped 1/2 of my sweet potato with the chick peas and drizzled a little more Xagave on top. Added a side of broccoli and few leftover sweet potato fries and Voila. This dinner was as good as I had imagined it.


The only problem was I cooked the broccoli a little too much and it was slightly crispy. Oh well. I still went to bed a happy camper.

This morning for breakfast was another easy decision for me. I knew exactly what I wanted. And english muffin topped with my favorite combination.

That’s right, almond butter and pumpkin butter. And of course because it snowed last night and this morning, I used my snowman plate for fun.

This breakfast has it all! The fruit, the carbs, the protein, and some coffee for the energy kick. And it is so incredibly satisfying and filling. This may be up there as one of my favorite breakfasts.



Well I’m off to do a million and one things today. I have the next two days off so I’m heading up to my parents to spend some time with them. We are going to this awesome sushi place for dinner so I can’t wait to recap that later. And I will remember..BALANCE Is KEY and MODERATION! I have to remember these things a little more now that I am training for the marathon. I need to remember that everything I put in my body needs to help me instead of hurt me. And I plan to create me marathon training schedule and workout calendar this weekend as well as get some exercise in. My parents have this indoor gym at their condo so I enjoy using that during the winter..especially now that there is snow all over the place. See you back here later!
