Today started my official start day for Marathon Training. I am training for the Rock N Roll Marathon in San Diego in June. You can check out my training schedule here. Because I hurt my ankle in November, I have taken it easy and stayed of my feet since then. The ankle is about 90% and I felt like today was going to be the day to see what it was like to run again. I normally HATE running in the cold, but I have been off from running for so long that my legs ached to get back out there. So I had only 2 miles in mind, but I ended up doing 3. Running again after taking such a long break off was so liberating. It felt so good to be back out there. It was a slow three and I have the Garmin to proove it!
See I wasn’t lying. But I am not worried about my time. I was just thrilled that I felt well enough to run again. My left foot and ankle (the one I hurt) did feel a little weird after my run so I immediately iced it down. After about 30 minutes it started to hurt a little again, but I’m just going to rest it tonight and tomorrow, and I should be ok. It was about 34 degrees out so I made sure to bundle up!
My lunch earlier must have helped keep me energized because I was full of energy while I was running. I had 4 leftover meatballs with BBQ sauce and some balsamic glazed veggies over quinoa. I get these veggies in the frozen food section at Trader Joe’s, and they were seriously good! I love having them over quinoa or couscous, I can eat the entire bag in one sitting. I mean they are good veggies! I dare you to try them and tell me what you think!
Dinner was another Trader Joe’s favorite. Actually it is a favorite now, but I had never had this until tonight. It was pork stuffed with spinach, cheese, and peppers. Sounds good right? Well it was!
I made some zucchini, squash, and onions with stewed tomatoes on the side. It was slightly similar to ratatouille, but with out eggplant. I added some herbs de Provence and other spices. This was one of my better veggie dishes. It had so much flavor and was a bit sweet from the stewed tomatoes. I must do this again soon!
I topped some leftover quinoa from lunch with the ratatouille twin
, put some pork on the side and called it a dinner. Healthy and tasty!

Well I have to finish up some work stuff before work tomorrow. Please cross your fingers that everything is ok with my foot/ankle. I need it to get better!
