So I realize that putting that video on my last post is really putting myself out there. I watched it again and thought to myself…really Lauren? You put that up for the world to see? But yes, yes I did. All in good fun. And I’m pretty sure I pronounced “spiralizer” wrong. Oh well.
When I went grocery shopping this last time I picked up some breakfast foods that would be good in case I was in a rush and didn’t have time to make a breakfast. Who am I kidding…I’m ALWAYS in a rush. And this morning was one of those mornings. I did not want to get out of my nice warm flannel sheets and way overslept. This resulted in me not getting a workout in and not eating a sit down breakfast. I grabbed a Trader Joe’s Banana Chocolate Chip Power Muffin, and some fresh blackberries and blueberries.
These Power Muffins are To.Die.For and pack in 7 grams of Soy protein. Sounds good to me. It really helped take the edge of this morning and kept me pleasantly full for a couple hours. Can you believe that little muffin does all that? It is pretty dense, and packed the banana chocolaty goodness. The berries weren’t so bad either.
I had originally packed some leftovers from last nights dinner for lunch, but every time I thought about eating it, my stomach turned. To be honest I am not feeling so well today, and the only thing that sounded good to me was soup. I thought about my options, and decided I could find something fairly healthy at the grocery store across the street. I perused the soup isle and the hot soups that were available and decided to go with a small bowl of Jambalaya and some Ak-Mak crackers.
It took me forever to decide with all the options available right now. Organic, all natural, low sodium, low fat, low sugar, and the list goes on and on. But I wanted a really satisfying lunch, so I made my final choice on the Jambalaya. It looked and smelled really good and was a chicken broth base instead of cream.
And I opted for a small bowl instead of the medium that I usually get. This way I save a bucks and a few calories. I chose Ak-Mak crackers because I loved the ingredient list. It was about as simple as they get.
I had to put this away after a few because they were absolutely delicious with the Jambalaya. This was exactly what I wanted today and was super satisfying! (and it cost me less than $5-how great is that?)

At least you actually *had* breakfast! Sometimes I’m in such a hurry that I forget to eat all together, and we all know that that’s a no-no :/ You know, sometimes I actually like those “one the run” mornings because they give me an excuse to opt for a muffin or donut from Dunkin Donuts instead
I know, I’m bad….
Gosh, I wish our TJ’s here had those muffins, that’s exactly what I’m looking for as a mid afternoon snack. I go with coffee for taste and because I “need” the pick me up.
