Well as most of you have experienced yourself, or have seen on the news or other blogs, the ground is covered in snow here! I absolutely love snow and was so happy I had the day off yesterday to enjoy it. It was so beautiful and was the perfect day to stay in and be lazy. I wasn’t too lazy though. Chris and I spent most of the day cleaning our apartment because it needed it! It feels so nice now that it is done and out of the way…until next time.
We were supposed to go into Baltimore last night to have dinner with a bunch of my friends for restaurant week, but those plans fell through the cracks when the snow wouldn’t stop falling. It was kind of nice to just stay in though. We ate like crap pretty much most of the day (leftover Chinese, chocolate chips muffins, hot cocoa), but had a nice veggie filled dinner to balance it out. Hey-you gotta let go every once in a while right?
We made mini pizzas on whole wheat high fiber tortillas. These tortillas normally taste DISGUSTING (and I will never buy them again) but topped with veggies, marinara, and cheese, they weren’t that bad. I topped my tortilla with marinara, broccoli, baby portabella’s, eggplant, zucchini, green olives, and Parmesan cheese. We didn’t have any mozzarella so Parmesan it was. It didn’t melt like I had hoped so I ended up pushing most of it to the side and just ate the pizza with out cheese.

And after the oven. I ate this bad boy with a fork and knife.
Then I consumed a good amount of this while watching Sex and The City. I was in heaven! Snow, Wine, and Sex and the City.
This morning I had one of the best cups of coffee ever! I know I said last time I don’t really like coffee in the morning anymore, but I felt like it today.
This was a Guatemalan coffee we picked up Trader Joe’s, and I used Agave and organic half and half. So amazingly delicious! When I got to work (after braving the snow with crutches and an opened toe boot mind you) I had some leftover chia pudding with strawberries.
Looks a lot like last time, I know, but it was an easy, quick, already made breakfast. Still tasted the same even after being in the fridge for a few days. Lunch was a mini sammie. I topped a toasted spelt English muffin with marinara, eggplant, zucchini, spinach, and fresh basil. A party in my mouth!
I really wanted to put some cheese on this sammie, but I have been eating so much cheese lately that I had to tell myself “Lauren, step away from the cheese counter”. It’s a serious problem I have working with cheese everyday. I love veggie sandwiches though, and this one did not dissapoint. Veggie sandwiches are pretty amazing.
Speaking of the cheese, I did have a few bites of different cheeses that we just got in the store. What? I have to try the cheese so I can sell it to customers! But only a few bites was had. No more. After lunchy I had two small pieces of dark chocolate to satisfy my sweet cravings.

You poor thing, getting around in snow with your booted leg must be tough.
That chai pudding looks DELISH. Aaand so does the wine. Did I mention I spent all day wine tasting? Wedding venue shopping at wineries, its a tough job being a bridesmaid. Even mid-winter I was really craving viognier today. Got my fix.
