Who Doesn't Like Apple Pie?

Well friends-today I started my day with apple pie. Not just any ordinary Apple Pie. Today I started my day with and an apple pie Green Monster. The Green Monster Challenge is still going strong! To make my apple pie monster I combined the following ingredients:

  • 8oz unsweetened Vanilla Almond Milk
  • 1 packet Amazing Grass Greens Powder
  • 1 Tbs Maca Powder
  • 1.5 Tbs Almond Butter
  • Lots of cinnamon and nutmeg
  • 1/2 Honeycrisp Apple
  • Vanilla Extract
  • 3 Huge handfuls of kale
  • ice

I diced the apple in small pieces and nuked it in the microwave for 1 minute then added it to the mix. I also had run out of frozen bananas and had to use ice today. I wasn’t too happy about the consistency of the smoothie and will definitely be buying some bananas today. It made the smoothie really runny and tasteless. I love what the bananas do to the green monster. I also had to add lots more cinnamon and vanilla to make it taste a little better.


This definitely wasn’t the best green monster I have ever made, but I’m experiencing with different flavors. I was also a little bummed you couldn’t taste any of the almond butter. I was really looking forward to that.

I also enjoyed a mug of my coffee in the car on the way to work.

I found myself quite hungry very early today, but I did my best to hold off until lunch.

Lunch was leftovers with a spin. I took the BBQ Chicken and ‘coleslaw’ from last night and piled them on some Arnold Flax & Fiber Bread. It was like a southern BBQ sandwich. When I lived in North Carolina I experienced many BBQ places, and they would always serve the coleslaw on the bun with the pulled pork. I loved this combination so I decided to mimic it today.



A little messy, but still good!

Tonight I will be doing my second run with the Georgetown Running Co. I’m glad I have this group to motivate me because I am feeling very tired today. So now I have no excuses.

I love when you can take leftovers and make them into a sandwich! Yours looks delicious!

You have inspired me to make a new Green Monster!

The Deep Blue-Green Monster:
1 and 1/2 cups almond milk
1 scoop whey protein powder
2 big handfuls baby spinach and/or baby greens
1 cup frozen blueberries
2 T Hemp Seeds
pinch of sea salt
1 inch pc fresh ginger, chopped

The color was beautiful! The hemp seeds give a nice nutty flavor plus Omega 3′s and protein.
I didn’t have the Greens powder, but will try that too.
