Here is how the rest of my day went…
Turkey and Honeycrisp Apple Sandwich on 2 pieces of Arnold Double Fiber Bread.

I took a few slices of lunch meat turkey, 1/2 a Honeycrisp apple sliced, romaine lettuce and piled it on my Double Fiber bread with some honey mustard.

Wonderful combination I must say! I found myself a little hungry around 3pm so I whipped out a snack I had been waiting allll day for! Not just all day, but probably even a month! I finally found it!

Pumpkin Pie flavored yogurt from Stonyfield!!!!! I topped my yogurt with about 1/2 C of my pumpkin flax granola and called it a snack.

I flippin’ LOVE this yogurt. It doesn’t taste exactly like pumpkin pie, but you definitely get pumpkin and spices and that is just nice to me!
I also taste tested a new cheese we got in the store. Can I just say I am GOOD? This cheese is out of this world amazing! It is Cypress Grove Chevre Truffle Tremor.

We normally carry the Cypress Grove Midnight Moon which is a hard aged goat cheese that I really like, but we needed a new soft goat cheese.

Well this cheese is money! It has a very creamy outer layer and a harder more chevre like inner layer. As the cheese sits out longer and the flavors start to soften it becomes much more creamy and gooey.
The flavor of truffles combined with the ripened goat cheese is simply perfection. It is a sophisticated cheese that is earthy yet elegant. This cheese has so much flavor that lingers in your mouth for hours. It is truly delicious, and would be paired perfectly with any white wine. The website recommends topping polenta or mashed potatoes with it. OUU HEAVENLY!
I had 2 small pieces like this. I absolutely love the flavor of this cheese.

I got out of work a little late so I was not able to make it to the yoga class. I was really excited to go, but I know there were will be every other Sunday. I did some much needed stretching in my apt which was just perfect.
I plan to attend these Sunday classes regularly though from now on, and hopefully get out of work on time. I was actually a little relieved that I wasn’t able to go to yoga because I was starving and really tired. It worked out for the best.
Dinner was something I thought about all day. I’ve seen these baked pumpkin chickpeas all over the blogs, and I just had to try them.
Pumpkin Chickpeas, broccoli, asparagus, and sweet potatoes. Such a great fall meal don’t you think? For the chickpeas I just mixed in these ingredients

with a little olive oil and stirred them up in a bowl.

Then I laid them on a baking dish and popped in the oven at 400 degrees for 30 min. I checked them constantly because I didn’t want them crispy hard, but I didn’t want them soft.

I topped my sweet potato with the pumpkin chickpeas and had a side of veggies. I ate a little more veggies and added a little more chickpeas than you see in the picture.




Chris needs his meat so he got sausage instead of chickpeas, but I very well liked my vegetarian dinner. I tell ya sometimes I am just not huge on meat. But I could never go with out cheese! I did have one bit of his sausage though.
For my dessert I had a tiny bowl of Edy’s Slow Churned Fudge Tracks. It was exactly 2 spoonfuls to be exact.


I love this ice cream! Now I am off to enjoy my Sunday with the boyfriend.
I plan on taking full advantage of the beautiful weather this week and running my heart out.
P.s. I felt awesome today. Energized, awake, and healthy.
Not sure if it was the Green Monster, but I don’t care what it was, it felt great!
