Well hello there-
Yesterday I took a “me day”. I needed a day to myself to get my hair and nails done and do a little shopping. It was WONDERFUL!
After I got my hair and nails done I went over to Whole Foods to pick up some Stonyfield Oikos. I was having trouble printing the free coupon online so Kristina from Stonyfield sent me a few in the mail.

That was incredibly generous of her and I thank you so much! I am a HUGE fan of Oikos, and this was such a fabulous surprise. Thank you thank you thank you!
Next I stopped at the Bicycle Pro shop. A while back my dad had so generously bought me a bike rack so I could keep my bike at my apt.

My bike was at my house at home, and I needed a way to bring it to my apt. They had an extra bike for Chris so we loaded the bikes up one day and brought them to the apt. I haven’t even been biking since then, and I am really itching to get out there. But I didn’t have a helmet. So I stopped at the bike shop and picked one up. Good brand, good color, good fit, good price. I heart it.

Then I was just looking around in Harry & David and decided to try their Pumpkin Spice Coffee. You know how much I LOVE coffee, and I especially love the flavors this time of year. I just had to get some. A little pricey compared to what I’m used to, but it was sooo GOOD!

And then I stopped in LUCY because they were having a 10 yr anniversary sale and everything was 30% off. I couldn’t resist. I love their running and yoga clothes. Speaking of yoga-I’m pretty sure I am going to start going to the free yoga classes at LuluLemon. And LUCY also offers some free classes that I decided to sign up for. I am really excited about this now that I know their class schedule. There are way too many Lululemons and LUCY’s around me NOT to go. I love free classes!

Last night I made a recipe from Giada De Laurentiis. It was from her episode Giada’s Spa Weekend Brought Home. It was called Artichoke & Tomato Panzanella, and it knocked my socks off. I followed her recipe exactly, but I used French bread instead of Whole Wheat. First I cut up some crusty French bread and thawed the frozen artichokes. I drizzled them both with olive oil and seasoned with salt and pepper. Then I grilled them on my grill pan.

While they were grilling I cut up the tomatoes, olives, and basil, and added them to a bowl. Once the bread and artichokes were done I added them to the bowl, and made the dressing. Poured the dressing over the mixture and tossed.

This was so so easy, and tasted fresh, vibrant, and absolutely amazing! What an excellent meal to end an excellent “me day”.

After seeing a lot of the other bloggers pics from the Foodbuzz Festival it makes even more bummed I can’t be there. But I have a fun day of pumpkin baking planned to make up for it. First I’m going to try pomegranate waffles inspired by Caitlin. And then Chris and I are doing pumpkin muffins, cranberry pumpkin bars, pumpkin granola, and maybe one other thing-not sure yet. I like to make pumpkin season last longer than it really is. I also picked up some pumpkin beers from my stores. The good kind-the kind you don’t find in the grocery stores. Can’t wait to try them!
I’m also planning on taking my bike out for a bit today since it is a perfect sunny fall day, and I still have to recap my Citronelle Dinner from the other night. So much to blog about, so much to bake, so much to do, but so much fun!
