My five course meal

After a really long day at work, and my legs killing me from my run, I was ready to head home and R-E-L-A-X! I am not really sure why my legs have been hurting me today, but I hope it passes.

I know I sound like a broken record with this, but it is raining…AGAIN in DC. I mean-won’t it just ever stop? Not only is it raining, but it is actually very cold. The rest of the week looks gloomy too. I hope this doesn’t affect my run tomorrow night or my race on Thursday!

My snacks this afternoon were the 2 carrots I showed you earlier, and my seasonal staple. Stonyfield Pumpkin Pie flavored yogurt and my home made pumpkin flax granola.

I am getting to the bottom of this granola so I think I need to make some more soon. It was so easy to make that I will be making my granola from now on.

Dinner was really random. It was also eaten in many parts. Chris had dinner at this parents so I only needed to cook dinner for myself, and when I do that I tend to eat really random things. Here is my 5 course meal.

I started with a glass of Begali Valpolicella Ripasso 2007. I love this wine for its dark fruit and hint of baking spice. So darn good.

I proceeded to have another glass with dinner. The second course was 2 handfuls of unslated peanuts while I was cooking.

The third course was an egg sandwich. I took 1 egg and 1 egg white, scrambled them with some non fat milk, and popped in the microwave. I had my egg on an Arnold Whole Grain Sandwich Thin with a little Tomato Basil Marinara Sauce.


I have completely forgotten about egg sandwiches and they are sooo good!

The fourth course was 2 turnips roasted with a side of Trader Joe’s All Natural BBQ sauce.

I love this Trader Joe’s All Natural BBQ sauce. It is sweet and spicy. Love it with the spicy turnips.

My fifth course was kale chips. I still felt a little hungry so I decided to roast some kale in the oven. This was my first time making kale chips and I got the idea after reading some blogs, but also after roasting brussels sprouts and loving the little crispy leaves that fell off. This is an ingenious idea. I put a little seasoning on them to spruce it up.

As if that wasn’t enough I had a small piece of chocolate to satisfy my chocolate craving. Sorry the camera ate the picture. ;-) I guess this 5 course meal + dessert was fairly healthy since it was all low fat and included lots of veggies. I did use some olive oil for the kale and turnips, but not much.

Now I’m ready for a great night of sleep. I hope my leg feels better tomorrow!

I’ve still never had kale chips. Must try them soon!

Sorry your leg is bothering you. My advice is to rest it a few days, otherwise it will get worse. Take it from me, I’ve had so many injuries, and could have prevented some of them by resting my body. Good luck! dinner looks fantastic btw.
