Today has been a baking success.
I started this morning like I said in my earlier post with Pomegranate Waffles. I don’t have a new age waffle maker, but the one I do have works just as well, even if it is ancient. This waffle maker was given to my parents as a wedding gift. It is over 35 years old, and still making incredible waffles!

I started with a whole pomegranate and took the seeds out following the directions on Kirstin’s blog. Kristin has the best How-To Guides. It worked perfectly and made no mess at all! Then I just made regular waffle batter with Health Smart Bisquick, and added the seeds. I doubled the batch so I would have some leftover for this week.


Perfection. A little agave and extra seeds on top, and it was truly perfection. It needed a little more sweetness so I drizzled some low sugar maple syrup. MMMM.


There were tons leftover for the week too.
For lunch I had the leftovers of my Panzanella from last night. The bread was soggy so I grilled it back up with the artichokes and tossed it all together. Still soo good, and had more flavor now that it marinated all night.


I also had a Weyerbacher Pumpkin Ale on the side. This beer is like Thanksgiving in a bottle. Spicy, a little sweet, and very hearty. I liked the flavor, but I felt like it was a meal in itself.

As far as baking today, I made Pumpkin Bran Muffins, Cranberry Pumpkin Bars, and Pumpkin Spice Granola.
Each dish came out just right! I was so thrilled. I substituted Agave Nectar for sugar where I could. I also used low fat buttermilk and skim milk, and whole wheat flour instead of regular white flour.

I would post the recipes, but I have no idea where I got them from. I’ve had them for quite some time, and just now got around to making them.
In Other News-This is something I’ve been meaning to do for a while, but last week Abby from Abby’s Vegan Eats awarded me with the Kreativ Blogger Award.

I was so exstatic and excited she chose me! So now it is my turn to tell you all seven things you don’t already know about me, and pass it off to someone else. Thank you soo much Abby! I hope I haven’t mentioned any of these before, and if I have I apologize.
1. I played Eliza in My Fair Lady, and did musical theater throughout middle school and high school.
2. I would love to travel to everyplace in the world, but would love to live in NYC, Chicago, Florida, and Europe at some point in my life.
3. I used to be on my high school dance team (Lancer Drill Team), and truly miss it.
4. I was a bridesmaid model on the show Glamour’s 20 Wedding Do’s and Don’ts. If you are ever watching The Style Network, and this show comes on-look for me. I show up about 10 times, and yes I counted.
5. I want to have a destination wedding, and I want to get married on the beach.
6. I want a bulldog some day. If possible I want it to be a mini bulldog, but I’ll settle for a regular bulldog.
7. I am absolutely horrible at directions, and desperately want a Garmin for Christmas. I always get lost…always.

The pumpkin spice granola looks amazing! I have always wanted to make granola but I have been intimidated….I guess I will just have to give it a try
