Back on Track Week-Day 2

Since my post yesterday was so long I thought I would let you digest it for a while and not do another post the rest of the day. Here is a mini recap of YESTERDAY:

A while ago Caitlin and Angela had Get Back on Track Weeks themselves, and I thought what a great idea. So I declared this my official GET BACK ON TRACK WEEK. I have been indulging a little too much in rich and unhealthy food and wine, and it is time to just take a little break and regroup myself. I certainly don’t want to spiral out of control.

To start my BOTW I Ran 4.5 miles in 40:49-see stats here

When I got back I had 2 TBS of Chlorophyll in 16 oz of water. I am going to start doing this from now on because there are so many health benefits to chlorophyll.

I was so full from dinner the night before-see post from yesterday-that I just was not hungry until about 1:30pm. I know you are supposed to eat breakfast, but I just was not even close to wanting food until 1:30 so I skipped breakfast yesterday. It happens.

Lunch was an overstuffed veggie sandwich with 2 pieces of part skim provolone cheese, lettuce, tomatoes, mushrooms, and honey mustard on Arnold Double Fiber Bread.

Snacks today were a juicy and sweet Honeycrisp Apple-a new fave of mine, and a Stonyfield lowfat yogurt with 2 TBS chia seeds.

A good snack that kept me full till dinner. I also had a mug of green tea.

When I got home I knew I needed lots of green vegetables for dinner. So I made roasted brussles sprouts and broccoli over top quinoa with toasted pine nuts and dried cranberries. My idea was to mix it all up together in a bowl type dish, but I ended up just putting everything separate on my plate and eating it all together. It still worked great.

I bought this huge bag of Quinoa at Costco last time I was there. I love quinoa for its awesome nutrition facts, and I have to say it is probably one of my favorite grains and is up there with couscous. This bag will last me a while! I made the quinoa with 1 C chicken broth and 1 C water.

I tossed the veggies with olive oil, salt, and pepper, and baked at 500 degrees for about 20 minutes.

They came out PERFECT. Why are roasted vegetables so darn good!?!?!?! I love eating the crispy leaves that fall off the brussels sprouts. They are like brussels chips. I love picking at them and crunching on them.

This was such a satisfying light meal that I really needed after a week like last week. I loved the toasted pine nuts in the quinoa and the dried cranberries added the perfect little sweet touch. I really liked all the flavors together. I had one chicken tender on the side. I could have done with out this, but I wanted to get a little more protein in the meal. I had it with a smidge of BBQ sauce.

Now we are all caught up to today. This morning I didn’t wake up as easily as I had hoped, but I was still able to do my morning routine (which I skipped yesterday). I knew I was going to go running with the Georgetown Running Co. this evening so I didn’t have to get my run in this morning. It was nice to sleep in a little. Two Tuesdays ago I planned to run with the Georgetown Running Co., but it rained so I REALLY hope it doesn’t rain tonight. However, there is something else I could always do. I received a one free week pass to a gym near me for signing up for my next race, the Turkey Chase 10K. So I can always use that if need be.

In Other News-I am now following @MyTrainerBob on Twitter and plan to do his challenges as much as I can. I think he gives really great tips on ways to sneak in exercise in your day. I’m looking forward to it.

ALSO-I am hosting my VERY FIRST GIVEAWAY!!!!! I am so excited, and I can’t wait to show you what it is, but you will have to wait until my later post to find out. It is a good one I promise!

After I finish this giant mug of coffee I am off to conquer the day! Wish me luck.

that dinner looks soooooooo delicious!! i’ve never roasted broccoli before (i’ve always steamed it), but i definitely wanna give it a go!

That is my favorite kind of tea!!

Also, I need to join Costco so I can get a bag of Quinoa that big :-D
