Lunch in a pinch

Hope everyone is having a great Monday so far. My lunch today was muy bueno! I came up with the idea randomly this morning just by looking in my fridge at what we had. So I came up with this.

I absolutely LOVE Mexican food. Actually now that I think about it, I think it is one of my favorite types of food. So anytime I can recreate Mexican food into a healthier version I’m all for it! So I made a veggie quesadilla with home- made guacamole. I know it doesn’t look that pretty, but it was so goood. I took a whole wheat tortilla and topped it with the leftover asparagus (I actually washed the asparagus because I thought they were too salty last night), 1 Veggie Medley Gardenburger smashed, and about 1/8 C low-fat feta cheese.

I stuck my quesadilla in the toaster (since that is all we have at work) and let it get nice and melted. I had some leftover guacamole from this weekend that I decided to have on the side.

I think I make the best guacamole, and I got the recipe from a restaurant Chris and I went to in San Antonio, Texas. The recipe calls for 2 avocados, fresh orange and lime juice (the orange is what makes ALL the difference), fire roasted tomato salsa, chopped red onion, cilantro, and sea salt. This is by far the best freshest tasting guacamole recipe out there. I love it.

The guac I made this weekend was not that good, and I was so disappointed. Better luck next time. However, it sure did add some fun to my quesadilla today. I just used avocado, 1 tomato, white onion, orange and lemon juice (I think the lemon threw it off), garlic salt, and salt and pepper to taste.

Snacks today include Stonyfield yogurt and a peach. I was able to stock up on these Stonyfield yogurts thanks to Costco. So much cheaper there than in the grocery store. Too bad they didn’t have Oikos. I am enjoying the yogurt now, and I plan to have the peach later. I am DYING to try the Stonyfield Pumpkin Pie flavor. I need this yogurt!

In other News-I signed up for the Caitlin’s Pile on the Miles Challenge. I am doing this to help motivate myself through the holiday season to keep working out instead of putting on the pounds. Check it out for yourself!
