Last night and Today

(My pictures for this blog got lost in translation! :-( )Lets start off where I left you yesterday. I got a little hungry around 6pm so I had a few carrots and some Asian Toasted Sesame dressing. I used to always peel my carrots, but now I just eat them whole.

Dinner was pork chops and mixed roasted veggies…again.

I grilled the chops on my grill pan with some Honey Bourbon Seasoning.

The veggies were eggplant, turnips, and sweet potatoes. I tossed everything with a little EVOO and baked for a good while. When they were finished I sprinkled with Herbs de Provence and Truffle oil.

The pork came out amazing, but the veggies were a little plain. I thought the truffle oil would kick them up a notch, but not so much. And I know the pork looks big, but you probably got about 3-4 actual ounces of meat off this bone.

Dinner was good, but I needed something else. So I had a few of these awesome Organic cheddar crackers with pumpkin seeds. They were on sale at Whole Foods.

While making dinner I enjoyed a delicious glass of White Burgundy. This particular one is the Grivault Bourgogne Blanc 2006. I love this producer and this wine did not disappoint. It was gorgeous! Rich fresh butter, nutty character mixed with lively crème fraîche and bold tons of tropical fruits such as fresh pineapple and peaches. The wine is round with a solid core of fruit and structure. I loved how rich and buttery this wine was. It reminded me of a Meursault, and that is because they get most of their grapes from Meursault. Very smooth. Not the BEST pairing with pork, but it was all I had.

I also had a bowl of this delicious ice cream for dessert. I seriously could eat ice cream all day and never get tired of it.

This morning I woke up late, but still got in my 5 mile run. I decided that I was going to run the exact same miles as I ran last week since it worked out for me so well. That means 5 miles today and 10 or 11 tomorrow and then rest day on Friday. And can I tell you something? It was HOT out there today. I had no idea how warm it was so I wore capri leggings and I was burning up. Here are my results:

  • Distance: 5.13miles
  • Time: 45:38
  • Mile 1: 9:17
  • Mile 2: 8:53
  • Mile 3: 8:59
  • Mile 4: 8:57
  • Mile 5: 8:29
  • Last .13mile: 1:02
  • Average Pace: 8:53/mile
  • Not my fastest 8K ever, but I wasn’t prepared for the heat out there.

    When I got home I continued reading my packet for this weekends race. This whole time I was thinking there were only 1,500 runners doing the half marathon. Then I read there will be 1,500 runners in each pen and there are 5 pens. Do the math and that equals 7,500 runners. 7,500 RUNNERS!!!! Are you kidding me? I have no idea what I got myself into. Really.

    So I took a deep breath, and started to prepare dinner for tonight. I also made myself a fantastic smoothie for breakfast. It had:

    • 8oz unsweetened chocolate almond milk
    • 1 nectarine
    • 3/4 of a Oikos vanilla yogurt
    • 1/2 frozen banana
    • Amazing Grass Chocolate Packet

    My smoothie was EXACTLY what I wanted this morning. I love how creamy the Amazing Grass powders are, and not artificial tasting at all. Too bad it didn’t last very long. It was good.

    I seriously need groceries right now-no joke!
