I have to tell you…my dinners this week (although only being 2 so far) are the BOMB! Last night’s chili was out of this world, and tonight I made home made soup for the very first time, and it was crazy good.
For the soup I combined
Organic Vegetable Broth (this stuff has 5 calories per cup-how great is that?)

1 can No Salt Added diced tomatoes (I try to cut salt wherever possible)

diced carrots

chopped up kale-from the Amish Market

1/2 can leftover black eyed peas

chopped and sauteed onions

diced zucchini-from the Amish Market

1 C leftover pasta (sorry no pic-I was concentrating on the soup and completely forgot!)
Various Seasonings

It was here I realized I am pretty much out of Spike Seasoning!!! OH no say it isn’t so..I LOVE this stuff.
And I let it boil and simmer for about 1/2 an hour.

Boy was it good. The New Orleans seasoning I put in had some red pepper flakes and it gave my veggie soup quite a kick. Exactly the way I like it. I had the soup in my spooky Halloween bowl.



Before the soup I enjoyed some ‘chips and dip’. I combined 2 tbs hummus with about 3/4 C pineapple salsa

And these were my ‘chips’. I get these at the Amish Market and each disc has only 16 calories. They are way better then chips in my opinion, and after 3 your craving is satisfied.

Such a great dinner, and guilt free!!! As you can see I get a lot of my veggies and snacks from the Amish Market. There is an Amish Market near my parents house, and I absolutely love going there. The produce is so fresh and most of the time it is less expensive then the grocery store. I try to go there every time I go home to visit the rents.
Later I had a tiny sweet craving so I enjoyed a juicy orange.
