Fall Tuesday

My goodness I forget how much I LOVE fall! Today is slightly cool and very fall-ish outside.

Last night I was up so incredibly late working on my blog. I accidentally deleted pictures out of my media library causing blank picture spots on my blog posts. Such a pain in the butt to fix by the way! Not the end of the world, and I was able to get everything fixed, but such a mess! Unfortunately I didn’t get to bed until 2am so I did NOT wake up this morning to do yoga. There was no way I was getting up early. On top of that I have had an upset stomach for 4 days and everything I eat churns my stomach. Hopefully today will be different.

I got to work and had this for breakfast:

and some coffee of course.

I was so busy at work that I didn’t even eat lunch until 1:30. I started to get very hungry, but just pushed it off until I could eat. Lunch was pretty good-I must say.

I tried this new soup from Safeway-Organic Creamy Garden Tomato Soup.

I love their Tuscan Tomato Basil, but this one had 100 less calories per serving and almost 10g less fat per serving. I chose the Organic Creamy Garden Tomato. It was an easy choice. Still not the best nutrition facts, but it was what I was craving at the time.

This soup was rich and creamy. Velvety texture with fresh herbs and seasonings. Quite yummy!

I also made a new tuna salad. I used

  • 1/2 can tuna
  • 1/8 C hummus
  • grated carrots
  • 1/8 C low fat feta
  • 1/4 can black eyed peas drained and smashed
  • Spike Seasoning

Cara, a friend I met on the trip to Italy I took back in August gave me the idea of adding hummus to tuna instead of mayo. I love this swap! I was so surprised at how good this tuna salad was. WOW! Thanks Cara!

I also ate the tuna with 1/2 of a Lavash.

It was just the right amount of bread to scoop up the tuna. Almost like it was meant to be. Nothing fancy, but really fantastic and filling!

My friend, Kelly, is coming over tonight for dinner and we are going to make our own pizza. I got pizza dough from Trader Joe’s, and I can’t wait to see what kind of combination we come up with. I also have the perfect wine to pair with this type of pizza. Can’t wait!
