Sorry for the late post!
My breakfast held me forever this morning. It is so strange-sometimes my breakfasts work, and sometimes they don’t. Today…they did!
Lunch was OUT OF THIS WORLD! It might have been one of the best salads I have ever made. I love big salads and salad bars, and I love adding everything to them. In college I would always go to the salad bar and fill my salad with tons of unhealthy toppings such as Chinese straws, croutons, cheese, and loads of honey mustard. Oh the days…no wander I gained the freshman 15 20! But I’ve changed my ways, and today was the perfect example of how a salad can have loads of toppings and STILL be healthy.
In this salad I had
- Butter Lettuce
- Roasted Brussels Sprouts in Olive Oil
- 1 slice Polenta
- 1 Veggie Medley Gardenburger
- 1/8 C toasted pinenuts
- 5 chopped dried dates
- Olive Oil and Balsamic from Italy

I roasted the brussels sprouts last night, and prepped everything else this morning. That way all I had to do was combine and eat! Easy peasy.


There is something about the olive oil and balsamic from Italy..it is soo vibrant and flavorful. NOTHING like the kind here. I loved the sweetness from the balsamic and dates with the brussels sprouts, and the crunchiness from the pine nuts.



All together this salad was so delicious, and I was so upset when it was all gone.

Later I was freezing in my store (we keep it at 65 degrees for the wine) so I ran to the store for some tea. I came across this and HAD to try it.


Unfortunately it was not as good as I had hoped. It smelled really pumpkiny and yummy, but just tasted like cinnamon tea to me. But it did keep me warm.
And I had a Stonyfield Low fat Yogurt for a snack.


I MUST find the pumpkin pie flavor. Does anyone know where they are selling it in the VA/MD area?
I enjoy almost everything pumpkin, but recently realized I am not a fan of pumpkin lattes. I’ve had a few this year, and they just are not as good as I remember them. Maybe my taste buds have changed. Anything else pumpkin I just love! One year I even printed out over 50 pumpkin recipes. This year I have been a little behind on the pumpkin baking, and I am dying to get in the kitchen. I have made pumpkin oats and pumpkin pancakes, but that is about it. So I have a free Saturday on Nov 7th, and I dedicated it to pumpkin baking. Who says you can only bake pumpkin in October. Pumpkin season is Sept-Dec for me. That just how much I love it!
I am going to attempt these recipes that sounded really yummy to me: some sort of pumpkin muffins (haven’t decided yet), pumpkin cranberry bars, Meghann’s pumpkin falafal, and toasted pumpkin seeds. Rachel Ray had some great recipes for pumpkin seeds on her show. So many options to choose from!
I have a confession-I’m not running tonight. It is raining way too hard now, and I just can’t get myself to do it. I feel like such a slacker runner lately, but I just can’t run in this kind of rain. However, I was really proud of myself to be willing to run with a group of people I’ve never met before. Sometimes I can be shy and back out of situations like this. But this time I definitely backed out for the rain. It made me realize how much I’ve grown. I will definitely go next week (if it’s not raining). And I just have to work much harder the rest of the week.
Now I must think of something to make for dinner. And I may even make pumpkin granola..FINALLY!

I found the pumpkin pie yogurt at Harris Teeter in McLean (down the street from Tyson’s mall). If you are near there I’d def try it because it is newer and not many people visit it. Good luck!
