The first thing I was to show you is my awesome package my mom sent me. Sorry for the weird lighting issues-I don’t have the greatest lights in my apt for taking pictures.

Chris is French-hence the card. I could not stop laughing!!!


And these are Rice Krispies Treats on a stick. I think they are adorable, and I am saving mine for Halloween.

I was so excited about all that. Now on to dinner. Tonight was one of those easy peasy dinners. I got home pretty late again so I threw something really simple together.
Chicken with Balsamic Sweet Onion Jelly, Roasted veggies, and brown rice medley. Even though it was simple, it was pretty good too. I absolutely love roasted veggies.


(I don’t know why I always have issues with runny juices making a mess on my plates. I tried so hard to make it look nice, but it just went back to being runny…oh well)
I used this jelly and the Spike Seasoning for the veggies. I was so bummed because I used every little bit of Spike we had left and had to throw it out.

I drizzled some olive oil and the veggies, which made them take on such a good flavor. The veggies here are turnips, sweet potato, and carrots.

The rice was a mix I got a Trader Joe’s, and was outstanding.

Chicken was nice and juicy like I like it. This is 3/4 of a chicken breast. The whole thing looked like way too much (even though I probably could have eaten it all), but I knew I didn’t need it.


Dinner was ok, but I got a huge sweet tooth afterwards. I knew there was pumpkin ice cream in the freezer, but instead I had two handfuls of dark chocolate covered edamame (freakin amazing!)

I am now enjoying some herbal mint tea and calling it a night! I’m exhausted!
Tomorrow I’m out to conquer 5.5 miles. I plan to keep my track of my mileage for the Pile on the Miles 2009 Challenge on my workout schedule. This way I can keep track myself of how many miles I run. I can’t wait for it to start. I need the motivation.
