Tonight honestly felt like winter outside. I’m so unprepared for this weather change. Although they say the temperatures should be rising a little so it’s not AS cold out this week.
I knew I wanted chili for dinner and I remembered a delicious recipe my mom had given me last year. I had all the ingredients so as soon as I got home I went to town.
I made a very fall like chili with ground turkey, green pepper, onion, stewed tomatoes, chili beans, turkey broth, butternut squash, corn, garlic, cumin, and chili powder. The recipe is seriously so simple, and came out absolutely perfect tonight. The recipe called for ground beef and beef broth, but I had turkey on hand, and it worked out just fine!
I made some wild grain rice for my base and added the chili on top.


I wanted a few more veggies so I added a bowl of kale on the side. I topped my kale with balsamic vinegar.


Everything tasted so incredible. I was somewhat full after I ate this, but I still went back for a small helping of seconds. It was just soo good on this cold night. As an added bonus-there was so much flavor in the chili that it didn’t even need salt! How great is that?

Love it! I also organized my olive oils in these carafes. I saw Giada have hers like this on her show and really liked it. I feel more like a chef for some reason when they are like this. LOL

Now I am relaxing with an orange and some TV.

I have a 30 day Shred on the schedule for tomorrow.

Mmmmm that looks SO good! I hope it does get warmer for you and you don’t have to experience winter JUST yet!
OK so I have a question…I just bought the oil and vinegar bottles and I put my EVOO in one. What kind of vinegar are you supposed to put in the other? Or do you? lol For now my other one remains empty!
