Another Monday-Another Week

Welcome to a brand new week. Let’s make it a good one! I started my morning with a little Jillian Michaels and the 30 Day Shred. I can’t say it enough, but I absolutely LOVE how great of a workout this is. And in only 30 minutes. I haven’t done the shred in a while, and you could definitely tell. I was working up quite a sweat this morning.

I made it to work and pulled out this new yogurt I found at Trader Joe’s. Now I know I’m no expert, but I consider myself pretty knowledgeable when it comes to food and nutrition and calories. I may not always eat right, but I know exactly how many calories are in almost everything I am eating. With that being said, I was so surprised that I didn’t know that all Greek Yogurts are NOT the same. I am so used to getting Chobani and Stonyfield Oikos that I just assumed all Greek yogurts were low in fat and fairly low in calories. So I could not wait to try this new brand I found, and didn’t even bother checking the nutrition facts before leaving the store.

The container was bigger then Chobani and Oikos so I decided to have 1/2. And good thing I did because I turned around the container to check out the facts and I was FLOORED!!!!!!

16 GRAMS of FAT!?!?! in 1 container of yogurt? That is ridiculous. And 8g of Saturated Fat. Luckily I only ate half, and the bad part is the yogurt was ridiculously good. Really rich and creamy. (go figure)

I enjoyed it topped with 1 1/2 Tbs of hemp seed, and a bowl of strawberries.

I had brought coffee to work as well, but I put way too much Truvia in it. It was way too sweet, and I only I had a few sips. BUMMER! :-(

I had to make a delivery for work and while I was on the Parkway I was just stopped for about 10 minutes in traffic. Luckily I had some great scenery to look at so I captured a few pics.

I really do love DC, and think it is a beautiful city. My favorite time to visit is during The National Cherry Blossom Festival. The Tidal Basin is just surrounded by these beautiful pinkish white flowered trees. It is quite a sight to see.

I digress…

I was very hungry by the time I got back from making the delivery, and I couldn’t wait for my leftover chili!!! It was so good last night, and I was hoping it would be just as good today.

I really do love the soft chunks of butternut squash in the chili. It makes it more seasonal. And I don’t mind the ground turkey over beef. In fact I think I like it better.

I had mixed a little of the leftover wild grain rice in with the chili. This made the perfect filling lunch to get me through the rest of the day.

As I was sitting in traffic I also had time to plan my dinners for this week. I don’t normally do this because I never know what I will be in the mood for, but I have some veggies that seriously need to be eaten up this week. Here is what I planned.

  • Monday: Soup made from leftover pasta, zucchini, carrots, onions, diced tomatoes, kale and vegetable broth
  • Tuesday: Stirfry with snow peas, baby bok choy, carrots, asparagus, onions, and chicken in Trader Joe’s Yellow Curry Sauce over lemon coconut rice
  • Wednesday: Dinner at Chris’ family’s house
  • Thursday:Giada Spa Mealwith a twist-Salmon over lemon basil pappardelle pasta with asparagus
  • Friday-Giada Spa Meal-Artichoke and Tomato Panzanella with Grilled Sage Sausage
  • Saturday-TBD (going to a housewarming party in the evening)
  • Sunday-Homemade Pizza with Trader Joe’s Garlic and Herb crust, mixed veggies, basil, tomato, and mozzarella cheese

That’s about it for now. My week of dinners sound great-I just hope I can actually make them all. Back to work!

Im making chili for tomorrow!! Yours looks super super yummy!! Beautiful scenery btw, looks like a super, fall day!!
As for your question, I live in Carrboro, NC (right outside Chapel Hill).. I know exactly where Elon is.. how cool! It’s a great area :)
