A Rainy Night

Today’s weather has been the pits! It is cold, rainy, and gross out. It has been one of those cold, dark, rainy days that make you want be at home in bed with a good book or watching a good movie. And that is exactly what I am did when I got home. Chris and I had dinner and a movie planned for tonight.

I had this awesome Giada De Laurentiis spa meal planned for tonight, but the weather really put a damper on that meal. I was craving soup and a sandwich so I thought we would do paninis instead!

Chris and I used to ALWAYS make the best paninis back in LA, but let me tell you they were anything BUT healthy. Now, I know there are so many ways of making a healthy panini. But honestly I just wanted comfort food. So I compromised.

But first the snacks!

I love how colorful and vibrant kiwis are. This one was almost past its prime.

And I was still hungry a little later so I had some of the Cranberry Crisps. These little crackers are addicting. They are thin and crunchy with a hint of sweet. They are incredible with a soft brie or Fromage Daffnois, but I was trying to be good so I just had a few plain.

Dinner was simple and to the point. We shared my leftover Organic Tomato Soup from yesterdays lunch and made improv paninis. We don’t have any regular bread so I made mine on a lavash. I cut the lavash in half and made 2 paninis out of it. The first one was just simply tomato and cheese with a mayo/honey mustard shmear. The second one I just added a few more veggies and made it with tomato, cheese, mushrooms, turkey pepperoni, arugula, and a mayo/honey mustard schmear.

I love our Emeril Lagasse panini press. It was a free gift, and it has really made us some great sandwiches!

I was pretty full after the sandwich that I didn’t even eat my soup. I will save that for tomorrow. If I was really creative and had more time to prepare I would have done zucchini and eggplant paninis, but that will be next time. These were last minute.

After dinner we enjoyed these awesome No Pudge Fudge Brownies. My roomate in college got my hooked on them and I love them. All you have to do is add yogurt (in this case I added Greek yogurt) and bake.

It is so simple, and they come out all ooey gooey on the inside and crispy on the outside. I didn’t have the right size pan for them, but this worked just fine.

These brownies are dangerous…seriously!

Now off to watch our movie!

Yummy looking quesadilla.. I dont eat cheese but I could tweak your idea!! Where do you get lavash??

Oh wow. I must have those brownies….NOW! And then I’ll eat the quesadilla for dessert.
