The good, the sad, and the ugly

Hello fellow foodies! What a day it has been. The good, the sad, and the ugly. First of all I want to say how sad I am to hear about the death of Patrick Swayze. I was a huge fan of his, and Dirty Dancing is one of my favorite movies. It is the movie that I always watch with my dad for some reason. It was “our” movie. So much so that we are going to dance to the last song at my wedding some day. I am so sad to hear of this tragic news. I can just hope he is in a better place. RIP Patrick Swayze.

On to a lighter note…work was ridiculously crazy today. I didn’t have any time to blog. I was working constantly on a very tedious project, and was so happy to go home and have a glass of wine. But before that I needed an afternoon pick-me-up. I was craving some fro yo from Sweet Leaf again so I had to get some.

This was my only snack, so I told myself it was ok. Today I went with mango, raspberries, and blackberries.

It’s so good. You get all this for only $4.20. I think its a great deal, and you sneak in a few vitamins from the fruit! What could be better?

Once I got home I was ready to decompress. Now I know that I need to run 10 miles tomorrow so I needed to make sure not to drink too much. I indulged in one glass of my “wine of the month” which hit the spot.

When I got home, I had a package waiting for me. In the midst of my Agave craze, I had read on Meghann’s blog about the Xagave. It looked intriguing, and if you put in her name you got free shipping. The prices were reasonable so I decided to go for it. I ordered the cookbook with the free 18oz xgave. I also have to say that the people at xagave are very accommodating and helpful. The cookbook has tons of great recipes that look healthy and appetizing. I can’t wait to try them!

As I was flipping through my new cookbook I saw a recipe for mango salsa. I knew I wanted to make a wrap tonight so I took this idea and ran with it. I had leftover chicken that I thawed, some whole wheat wraps, black beans, cheese, and all the fixins for salsa. I got to choppin’!

My salsa came out A-MAZ-ING! What a wonderful concoction of flavors! I call it Laurens Peach, Mango, Avacado Salsa with a Spin. In the salsa I included:

  • 1 tomato
  • 1 mango
  • 1 avocado
  • 2 very small peaches
  • purple onion
  • lemon juice
  • AGAVE
  • salt and pepper

WOW-all I have to say is WOW! The agave was the perfect addition to give it just the amount of sweetness it needed. I made my wrap with a little chicken, black beans, feta, and this awesome salsa on a whole wheat wrap.

Another little fun thing I forgot to tell you was that I bought this cute cute poster. The poster is made by Madebygirl. Again-I saw it on Tina’s blog, and I thought it was one of the cutest things I have ever seen. Thank you Tina for showing this off because I fell in love with it. I absolutely love coffee, as you know from reading my blog, and I have recently fell in love with blogging. I hung it up in the kitchen, and it matches perfectly.
