Hello Fellow Foodies!
We are officially back in business. My camera is charged, and I’m ready to blog. So here is a little recap…
This morning I had this delicious parfait:

with another perfect cup of coffee.

The parfait included:



With a little hemp seed sprinkled on top.

This was yummy, but left me hungry for me. I held off until lunch, which was just leftovers from last night. So good still..seriously stoked about this new combination.
Snacks included cantaloupe, mini cliff bar, and 3 prunes. I also had a cup of my favorite Yogi Peach Detox tea. Sorry-still no pictures-camera was dead.
When I got home I was ready to make another magical creation. I first saw this idea on Megan’s Blog. I thought about the different possibilities I could make with it while I was running today. (Alright, alright-I know- thinking about food while I’m running? But I got bored!)
First I took some Perdue Fit & Easy chicken. I dipped each chicken piece (they weren’t whole breasts) in egg and then dipped them in crushed up All Natural blue corn chips. Thanks Megan-this was a GREAT idea! I placed the chicken in a baking dish and baked in the oven at 300 degrees for about 13 minutes. While my chicken was baking I grilled some pineapple on my new grill pan. I seriously am obsessed with my new grill pan. If you don’t have one..GET ONE! While the pineapple was getting all warm and juicy I made a simple salad. It included:
- 2 Tomatoes
- 2 mini cucumbers (seriously the cutest things ever)
- 1 avocado
- basil
- olive oil
- balsamic
- salt and pepper
Sometimes my dressings come out bland, but this time quite the opposite. It was bangin! I didn’t even have to add more of anything-I love it when that happens!

Here is the masterpiece.

All the flavors meshed so well, and I was just thrilled that everything came out so well.

I was not very hungry for dessert, but I wanted something a little sweet. I had 2 pieces of leftover grilled pineapple with a side of slightly sweetened ricotta cheese. I sweetened the ricotta with just a teeny tiny bit of agave nectar. I drizzled cocoa nibs on top for an added crunch. Perfecto!


This is more of a summery meal for such a fall feeling day, but it was just what I needed to end the summer off right.
In the travel area of my life I wanted to share my wall with you. And yes, I said WALL. In my apartment Chris and I have a wall of pictures. The pictures represent each place we have been together that is quite significant.

It includes:
- Hollywood (where we met)
- The Grand Canyon
- San Fransisco
- New Orleans
- Paris
- Napa Valley
and we just put up our picture of Samana, Dominican Republic yesterday.

We have been many more places together, but these are the biggest and best. We both have a passion to travel and hope to fill the wall some day.
Well I’m off to relax and hopefully bed early. I have a strength work out planned for the morning. My workout schedule has really been working. I have only skipped out of one day (but it was an eay day so I’m letting it slide)
