So I am getting ready to leave in about an hour on my trip to Italy. I am so excited!
Last night I made fajitas for my mom and Chris. They were extremely healthy, and oh so yummy. I sauteed 2 green peppers, 1 red pepper, and 1 onion. I sprayed the pan with PAM first and put the heat on very low so the peppers got cooked, but with out burning.


We had bought some Safeway Eating Right brand chicken tenders. I usually like this brand because it is less expensive then big brand names, and is pretty healthy. I chose tenders tonight because I knew that we were making fajitas, and I didn’t want to spend time cutting up breasts. To the chicken I added some fajita seasoning. I didn’t use the entire package, but about half the package. It really cuts down on the salt when you do it this way.

We also made some Spanish Rice. MMMMM

So we put it all together on some Whole Wheat tortillas, a little shredded cheese, and some pineapple salsa. MMM MMM GOOD!
We enjoyed our dinner with this great inexpensive bottle of Sauvignon Blanc. It is called Alto Tierruca, and it is from Chile. Really refreshing and crisp and not too grapefruity. Has a nice minerality, and a good amount of fruit. We finished the whole thing. It wasn’t a perfect pairing, but great for a hot summer night. And it is only $7 bucks! We sell it at our store…you have to try it!


I just finished packing for my trip, and bought some cliff bars and other bars from Whole Foods to munch on the plane. I can’t wait to try all these news flavors and brands!
